The chef, Fabian Feldmann, has always defended the same philosophy: get involved, innovate, create dishes that leave no one indifferent, using fresh organic or sustainable produce, offering fish from the fish market, making his own bread and discovering other ways of cooking... It's no surprise, then, that the restaurant has gone from one star in Germany to one Michelin star in Biarritz. The setting and service are impeccable, and the inventiveness and flavors on the various menus are expressed with talent.

Visitée en 2021 une farandole de couleurs et de saveurs qui pétillent en bouche pour entrer en matière des plats raffinés et savoureux j y retournerais un de ces jours à coup sûre. Ambiance un peu trop calme à mon goût mais ce n est que ma vision personnelle car j aime l Ambiance vivante des salles de restaurant et ce jour là la clientèle était assez " discrète voir ignorante j aime la chaleur humaine et les sourires staff au top service impeccable. Je recommande 100%
