The establishment has made a name for itself in Biarritz's gastronomic world. The chef, trained at the Lyon school, works locally, seasonally and according to the inspiration of the moment. The menu changes regularly, with a creative note for each dish and a harmonious wine pairing. Judge for yourself: spicy corn and ewe crackers, pepper-smoked mackerel, candied squash and smoked butter sabayon, Basque braised piglet and turnip/mustard, endive with Jurançon... Sweet dishes are just as creative: Meyer lemon granita with candied citron.
