In a short space of time, and after an initiatory journey with MOFs, starred chefs in the Basque Country and abroad, our pastry chef has made a name for himself as a craftsman, skillfully reinventing gourmet flavors with refined textures from around the world. Exotic cheesecakes, seasonal tarts, viennoiseries (made with PDO butter and local flour), savoury dishes such as lasagne, burrata salad, savoury waffles...

Right in the heart of Bayonne in the Basque Country (64)!
At the foot of Bayonne's Cathédrale Sainte-Marie, Guillaume Vella opened the doors of his Pâtisserie in July 2019. Anchored in a historic building in the city, its typical storefront will immerse you in the world of the Basque Country. On site, upstairs, or to take away, it's up to you!
Guillaume's creations are as tasty as they are delicious... It's up to you to discover them.

All our creations are made on site.
This is the concept of Artisanat, a unique savoir-faire that you'll find in every bite.
We give priority to local and seasonal products. We use local flour for both Viennoiseries and Pâtisseries. Our desserts are adapted to the seasons.
Protecting the environment through simple gestures is an essential part of our daily routine.
We limit the use of plastic as much as possible, and prefer eco-responsible cleaning products and packaging.
