Loïc is the latest in a long line of talented Basque cake-makers. Our artisan pastry chef of 42 years has finally made his dream come true by setting up his own workshop-boutique in Bayonne. On site, he controls his production from A to Z. Crowned best Basque cake in Bayonne in 1996, he now makes some thirty pieces a day using Herriko flour. These include cream, cherry and chocolate cakes, as well as shortbread and other boxed versions.
