There is no doubt that Hugues Becquart is a specialist in Arras andouillette. Since 1888, the company has been cultivating a taste for traditional craftsmanship from generation to generation. The pork butcher sets up in his laboratory and produces his flagship product, the andouillette, which is made only with Friesian pork, that specific part of the intestine, which makes it less fatty. Cette andouillette est délicieuse.
Aussi, je regrette que la tradition ne soit pas respectée; traditionnellement l'andouillette d'Arras est à la fraise de veau (nouvellement autorisée). les cambraisiennes, les lyonnaises sont revenus immédiatement à la fraise de veau, ce qui n'est pas le cas pour Arras qui "traine des pieds" en continuant à utiliser le frison de porc. Cela n'empêche pas à cette andouillette d'être très bonne. L'accueil et le service de patron mériteraient d'être plus joviaux et moins rigides.

A ne pas mettre entre toutes les mains. ...
Ça se mérite! !!!
A few months ago, friends made discover this meats which is extra, especially the sausage. We even pass through colissimo 10kgs of sausage for 1 retreat!!!!
The rolls of sausage, is worth more than the visit.
But do not stop that with sausage, ham, sausage... everything is house.
A large address.
