The pastry chef at this temple of gourmet goodness is Julien Ruffin, not Valentin, and he knows how to balance tradition with novelty. Choose from Intenses chocolatés, Fruités or revisited Grands Classiques, such as Mont-Blanc (almond cookie, red fruit compote, fromage blanc mousse, Italian meringue) or Paris-Bordeaux (crunchy choux pastry, light cream and praline heart). We love the Palets Bordelais (pecan, pistachio or crunchy praline, gianduja, caramel) and the cannelés, which are truly to die for!
