In the store, you'll find farmhouse cheeses from all over France. Romain Olivier pugnaciously defends the know-how handed down by his father, Philippe. Here, forgotten cheeses are given a new lease of life. Their cheeses can also be found on the menus of some of the finest restaurants in the area, earning the Fromagerie a national reputation.

Creator of the Saint-Omer camembert, he also offers the Clairmarais tome or the maroilles from his abbey, and many other regional flavors.

Since then, she has been making Bergues cheese, washed with beer as is the tradition, but she has also created her own cheeses: the Petit Bissezeele, the Bissezeelois or the Bissezeelin, with flaxseed or the carré du Chapitre. And even a camenbergues! A real delight.

Once you have passed the porch and crossed the vaulted passageways, the goat farm, all dressed in wood, is waiting for you. Béatrice welcomes you for a two-part visit. The first one, theoretical: biology, breeding, cheese making, the second one, practical: brushing, feeding of the kids (February and March), hay for the adults, milking. Note: the male kids do not end up in the slaughterhouse but in eco-pasture. No doubt, here we love goats!
