Cheeses, yoghurts, milk, cream, cottage cheese and butter: all the production is made with the milk of the 75 cows of Valérie Leroux and her family. Twenty years ago, Valérie started (at the time, it was quite a gamble!) in milk processing. Since then, she has been making Bergues cheese, washed with beer as is the tradition, but she has also created her own cheeses: the Petit Bissezeele, the Bissezeelois or the Bissezeelin, with flaxseed or the carré du Chapitre. And even a camenbergues! A real delight.
