He makes around forty homemade ice creams, using natural products (Bourbon vanilla, Sicilian pistachios, Valrhona chocolate...), which are produced in the workshop adjoining the store, and certain "must-haves" such as coconut, chocolate or blueberry remain on the menu all year round.
