Léonard Parli is also a must for its candied fruit, not forgetting confits, a speciality made from candied fruit that is just heated up and tasted like jam! Sun-drenched candied fruit whose thin sugar film reflects the light, slightly crispy marrons glacés on the outside and deliciously melting inside, calissons, quince pastes, nougats... you might as well know that if you enter this shop, you won't leave empty-handed.
It must be said that the owner, Pierrre Lilamand, knows his business well. For no less than five generations, the Lilamand family has been treating gourmets to centuries-old recipes. We really want to taste everything.

The calissons of the Confiserie du Roy René are among the best in Aix. Founded in 1920, it brings together the factory, the Calisson Museum and the shop. On direct sale, small calissons high in colour and flavour as well as a whole range of "spreads", cooked in a cauldron and combined with the famous Calisson du Roy René cream! In spring, home-made ice creams. Take the opportunity to visit the museum free of charge and observe the workshops where these sweets are made.

For 4 generations this company, created in 1880 by Epiphanie, the great-great-grandmother of Sylvie Parent (who currently manages the company) has been at the service of gourmandise. The calisson is the flagship product of the company. Classic, it is available in several flavors and is coated with chocolate at Christmas and Easter. The nougats, another speciality, have pretty names: Mister Nougat Caramel, Madam Victorine, Miss Vanilla, Mister Hard... Fruidoraix, Also the traditional orange blossom shuttles, and shuttles with olives, Espelette pepper or caramel chips. The ancestral recipes are respected but we will not know more, the factory is not visited.

Opened in 1830, the Brémond confectionery is Aix's first and oldest calisson factory, located at the time on Cours Mirabeau. Brémond calissons are distinguished by their aromas and textures: candied melon, crushed almonds, candied orange and lemon, and the melting/cracking properties of powdered sugar. The company also produces other sweets, including the famous olivettes, chocolate almonds, candied fruits and marrons glacés, as well as savoury products, oils and tapenades. Confiserie d'Entrecasteaux is one of the oldest calissons factories in Aix. Founded in 1889 and acquired in 2013 by Irène and Serge Evans, the factory has moved from the rue d'Entrecasteaux in Aix to the Halles 1889 in Eguilles, in a setting dedicated to gastronomy. The workshop is visible from the store, which is a veritable gourmet showcase for the calissons. The range extends to other Provencal specialties, including navettes, dry cookies and Frédéric Lang's sublime pastries. To take away or enjoy on site in the tearoom.
