From the 6 ha of organically grown olive trees, Guillaume produces: an explosive Haute-Provence PDO, 2 mono-varietal oils based on bouteillan and aglandau, and 2 lemon or bergamot flavoured oils. The olives are harvested by hand to ensure optimum ripeness and quickly pressed to retain maximum flavour. And in an eco-friendly spirit, Guillaume uses the remaining olive paste to spread on his land as fertilizer, and the stone waste to fuel the stove.

It must be said that she pampers her 4,000 olive trees of the Aglandau and Bouteillan varieties: reasoned treatments and olive picking with a feeler. Since 2006, she has her own mill in order to fully control her production of unfiltered PDO Haute-Provence, which gives it an incomparable texture. Her olive oil has already won a gold medal at the Concours National des Huiles de France in Nyons. Call early in the morning at the mill to be sure of its presence!

Read moreSituated at an altitude of 450 m, the Salvator estate is made up of 40 hectares of multi-centenary olive trees. This terroir gives Sophie and Frédéric Pinatel's olives a unique character. Four oils are extracted: cuvée Mistral AOP Haute-Provence, cuvée Durance AOP Haute-Provence (aglandau), cuvée Paradis AOC Provence (bouteillan) and cuvée Ventaïre AOC Provence (fruité noir in organic conversion). These cuvées regularly win awards (even standing ovations) at all the major agricultural competitions. A fine achievement.

With their trees, the couple produces a blend of oil, pressed at the Bonaventure mill, which they produce in fruity green and fruity ripe.
