BRETT & SAUVAGE
Read moreBrett & Sauvage is the brainchild of Francis Joncas, best known for co-founding the Pit Caribou microbrewery. However, the spirit of brewing is completely different here, with the place devoted entirely to spontaneous fermentation. The yeasts and lactic acid bacteria naturally present in the air seed the wort as it cools in the "coolship", before the beers and ciders are aged in oak barrels for one to three years. The result: exceptional products to be enjoyed without moderation!

Read moreIt's in an old Anglican church, refurbished for the cause, that four friends have set up an absolutely brilliant artisan distillery. The character of the place has of course been preserved, right down to the graveyard next door. To drink, nectars concocted from local Quebec products, including its flagship product, Les Herbes Folles, a gin made with herbs and wild flowers from the Gaspé Peninsula. The elixirs are not only available on site, but can also be enjoyed indoors or out in front of the church.

A great place to start the day off on the right foot, or to stock up on succulent products before a trip to Forillon National Park.

He embarked on this crazy project of a brewery farm built around a field of herbs, a berry orchard and a few beehives. The brewery's nectars include the divine Arcane 17 hop, the fruity Tite Framboëse and Framboëse, the long-keeping Cuvée Louis and the farmhouse Arrière-Pays. But Auval brews many other beers to discover.
