Laurent and Fabien Causse are the sixth generation of winemakers on the estate. They wished to give the name of the spring to their top-of-the-range wines, such as the Saint-André cuvée (a red AOC, 12 months in barrel) and the mauzac (a white, which remains in oak barrels for 6 months), but also to their traditional and local wines, including a rosé. A permanent research work, in reasoned agriculture, led to the elaboration of a sweet wine (limited series) served on the big tables of the region, between tradition, innovation and quality.

This first Gaillac hillside has seen more than five generations of the Auque family succeed one another, united by the same passion  : the love of gaillac. Like Melanie, their granddaughter, the women and men of this family have shaped this 35 hectare estate, plot after plot. Over the years and seasons, their work accompanies each vine stock, producing a very complete range: the Hauts de Laborie are presented in dry, pearled, rosé, red, Gaillacoise and sweet. The Mélanie cuvée in dry white and red (gold medal in Paris in 2008), presented in several vintages, is the result of a rigorous selection of the oldest plots. The Selection of old vines in red and white is a rather surprising speciality, such as this very aromatic grape juice called Grain de vigne, intended mainly for young people, and drivers!

Chantal and Nicolas Lebrun have been combining their know-how here since 2005, and are responsible for all the stages of the production of their wines. Mr. is an oenologist, so you can trust the ranges offered: fruity and acidulous white gaillac, fruity and spicy rosé, red with a dominant duras, sweet gaillac, but above all dry white gaillac aged on lees in barrels and braucol red gaillac unfined, unfiltered, combining power and finesse. Many of their wines have been awarded prizes by specialised guides. The Cuisineries Gourmandes network made no mistake about it!

Owned by Marie-Paule and Yves Burrus, the Château de Saurs is inspired by Palladian architecture and Venetian villas. So much so that the residence, like its splendid park, is listed in the additional inventory of Historic Monuments. Well established in the heart of the Gaillacois vineyard, the estate covers 42 hectares, 38 of which are planted with red grape varieties, conducted in organic farming and combining tradition and cutting-edge technology. On the Bastides circuit, the sixth generation of winegrowers of the Hirissou family presents its vineyard to you. For nearly 200 years, these enthusiasts have been producing superb wines from their 38-hectare estate. It must be said that the location of their estate - scattered on both banks of the Tarn river - allows them to combine two high-quality terroirs: braucols and duras in red, far from the eye, muscadelle and mauzac in white varieties. These two ambassadors of the gastronomic and wine-growing richness of the Pays gaillacois will make a special place for themselves on your tables, whatever the occasion.

At the top of a valley, in the tranquility and beauty of the hinterland of Gaillach, these owners work their 26 hectares of vines according to sustainable agriculture, with authenticity and character, in particular the Thibaud cuvée, made from pure Brocol, and a late harvest, the Maxime cuvée. But that's not all! They also offer two botanical trails (1.5 km or 2.5 km) to walk through the vines and discover grape variety panels and boards showing the plants in the vineyard (as well as audio comments from mp3 players - comments in English possible). Domaine Vaysette is also a cheerful welcome, in a modern building that can accommodate receptions and seminars.

Located between Gaillac and Lisle-sur-Tarn, this ^17th century château is a quality wine production site. Passed down from generation to generation within the Faramond family, Château Lastours is now in the hands of Louis, an agricultural engineer, who is responsible for perpetuating the heritage of his ancestors. Within its 60 hectares of vineyards, it produces a range of red, white and rosé wines that are renowned and regularly awarded medals in national and regional competitions.

Domaine Plageoles is 7 generations of winegrowers, 27 hectares and 2 farms: the Domaine des Très Cantous (Cahuzac-sur-Vère) and the Domaine de Roucou-Cantemerle (Castelnau-de-Montmiral). They produce white and red AOC wines, with a majority of white vines. In addition to cultivating mauzac in all its forms, Bernard Plageoles has brought back to life old grape varieties such as ondenc or prunelart. His natural vinification gives birth to beautiful sparkling wines (method gaillacoise), sweet and mellow, very characteristic.

Committed to the respect and love of his land, Damien Bonnet takes particular care of his vines. In the heart of the Tarn in the Gaillac area, this passionate winegrower shows an active pragmatism in the vinification and maturation. He allows his vineyard to produce wines with strong personality, and to occupy a place of choice in the evolution of the appellation of organic wines of Gaillac. The renaissance of the Domaine d'En Segur is due to the famous pharmacist Pierre Fabre. He acquired the land in 1989 and decided to replant the vineyard. Since 2017, oenologist Lionel Barre has been in charge of the estate. The vines are planted overhanging the Agout river, on terraces of gravel covered with silt and pebbles. The fruit of this crossroads of Mediterranean and oceanic influences, the domaine produces powerful red, rosé, dry white and sweet wines. The domaine has its own cellar and online store.

The Canto Perlic estate is perched on the gentle hills along the northern edge of the Tarn valley, just 6 km from Gaillac. Braucol, mauzac, loin de l'oeil and duras flourish here on 8 hectares of vines in organic conversion, in an eco-responsible approach for an estate turned towards sustainability. Poets will be delighted to learn that the estate's name means " partridge song " in Occitan, a partridge you'll recognize on the labels of several of the cuvées offered by this family-run estate.

Facing south and benefiting from a microclimate typical of the "little Tuscany" of the Tarn, the Barreau family's vineyard produces remarkable white, rosé and red wines. Their bottles are easily recognizable by the vine leaf on the label. If you need any other information to convince you to go and discover this Gaillac estate, you should know that the production of Domaine Barreau is marked Vigneron Indépendant, emblem of a family of responsible professionals who respect tradition.

This 20-hectare vineyard and olive grove has been producing nectars for about 15 years. It all began with the arrival of Christophe Merle, from Charente, in Gaillac. This region, particularly renowned for its vineyards, seemed perfectly suited for this professional to express his passion. In 2006, with his wife Christelle, they gave birth to this choice estate whose first vintage was released the following year. Since then, Château Balsamine has become a regular on the tables of gourmets and restaurateurs.

This 60-hectare estate stretches along the slopes overlooking the right bank of the river Tarn. An ancestral vineyard worked from father to son since the ^16th century, it is run by the Albert family, who perpetuate the tradition and know-how for which Gaillacois wines are renowned. New viticultural techniques are employed here, making this organically-farmed estate a benchmark for primeur wines in particular. Jean-Paul and his son Thibault work hard to maintain the high standards of their carefully blended cuvées. Grape juice completes the range.

Property of Christine Cornet-Tesconi, the Adelaide Castle operates a vineyard of 15″ ha, overlooking the valley of the Vère on a clay crouch downstream and limestone upstream, where famous, award-winning and quoted wines are born. Know-how, tireless attention of the vine to bottling: Thanks to these qualities, the Château Adélaïde is one of the very beautiful references in gaillac. At tasting, it is always a pleasure for the various proposed wines: Soft white 2015, cooked L 'Empress to the beautiful structure in the mouth, cuvée Special old vineyards, dry white 2016 Grand Reserve, vintage Prestige… A premium reception in premium.

Conviviality and simplicity are the key words of this 20 hectare estate which borders a pretty little stream (riou in Occitan). Taken over at the end of 2014 by Ludovic, a young man in his thirties, dynamic and in love with his profession, the estate released its first vintages a year later. Very attached to the respect of the terroir and the quality of the products, Ludovic and his wife Carole - who joined him in 2018 - practice sustainable agriculture and willingly share his know-how and convictions. The doors of Mas del Riou are thus very often wide open: evenings of dancing, oyster cocktails.... There are never a shortage of opportunities to celebrate and taste accessible and appreciated wines.

Created in 1999, this small family business dedicated to the vine has undergone a remarkable evolution. Purchased in 1993 by his parents when he was only 17 years old, Laurent learned his trade and techniques and quickly became a talented winegrower. At the age of 23, in 1999, he decided to rename the estate "Domaine St Laurent de Saurs". His first bottled wines arrived the same year: a red wine from the region and a dry white wine from the region. Today, he and Magali cultivate 25 hectares of vines and continue to modernize the farm. So much so that nowadays, the estate offers a range of nearly 20 different vintages.

Near Cahuzac-sur-Vère on the Cordes plateau, Domaine Cinq Peyres is remarkable for the quality and typicity of its wines. Of the 20 hectares of clay-limestone slopes, only eight are devoted to the vineyard, with its reds, dry (very fruity) and sweet whites. The rest of the vineyard is devoted to the "well-being of the vine" (planting truffle oaks and flowers) and also to animals. There are chickens, pigs, etc. A great approach!

Nicole and Cédric Carcenac are the heirs of a family history going back more than 7 generations. The estate covers 60 hectares of red and 10 hectares of white, on 3 geologically different soils: gravel, clay-gravel and clay-limestone. This diversity allows us to produce and vinify a large number of grape varieties of character: braucol, duras and syrah in red, far from the eye, mauzac and muscadelle in white, and prunelard in red, one of the oldest grape varieties of Gaillac with aromas of violet. The estate frequently organizes tastings and open houses.

Harvesting winegrowers, Régine and Jacques Crayssac love their job and are inexhaustible on the products of their cellar, of which they reveal some of the secrets with good humour: the antique cuvée for game and cheese, the fruity and spicy red AOC gaillac, the gravel cuvée (AOC gaillac) for civets, with brown/purple highlights, the local wine Côtes du Tarn rosé... We particularly recommend the sweet white muscadelle, whose yellow-green colour offers a balanced and fluid finish, ideal for foie gras, Roquefort or dessert.
