Read moreIn 1892, Eric Gobard's great-grandmother settled on the Chantemerle farm, where Coulommiers cheese was produced for 80 years. Today, reviving the traditions of the Pays de Brie, Anne and Eric have installed a mill made by the Green family in Tyrol, Austria. Using stone millstones, they produce organic flours from wheat, hemp and ancient cereal varieties they grow themselves. A visit to the site will reveal a wide range of flours (spelt, rye, wheat...), as well as cookies!
