With 33 vintages of yellow wine and 31 awards, Xavier Reverchon honors the 3 generations that preceded him. His 2011 was again claveliné at the 2021 breakthrough. His 6 ha are dedicated to this exceptional product, the Savagnin. A variety that the Polinois also declines in other vintages with "Les Boutasses" or "La Réserve" for example. The soils are ploughed and the vines are free of insecticides. The unfiltered reds also have their place, including a rare red macvin since 1979. A beautiful and functional cellar that can accommodate up to 60 people.

Sumptuous vaulted and ribbed cellars will not let your visit without reaction in this splendid domain. They date from the 16th century and give a foretaste of what awaits you. Annie and Jean-Luc settled here in 1991. Today, the couple owns 11 hectares, mainly of white wines, including the most famous AOC Château-Chalon. A particularity here: the yellow wines are matured in the attic! The Mouillards favour above all varietal wines. On the red side, we really appreciated this "Cousin", a cousin of the macvin, made with fine grapes.

What an irresistible rise Patricia and Christian have made since 1976, when the Pêcheur parents farmed just 1 ha. They now produce 8 hectares of 5 Jura grape varieties. What's special here is the age of the vines, which range from 35 to 50 years. The crucial stage is obviously the harvest: first the vin de paille, for which the bunches are pampered, then the chardonnay for crémants and still wines. Then come the reds, and finally the savagnin and the Jura star, the vin jaune, including an excellent Château-Chalon.

The Maison du Vigneron, based in Crançot, has a superb showcase in what used to be the winegrowing district of the prefecture town. This veritable institution works in partnership with winegrowers who bring in grapes, which corresponds to a harvest of 130 hectares. For decades, it has devoted itself to the vinification of unique wines. And it was in Lons that it first opened its doors to market them. As early as 1995, she put on the shelves the exceptional Jura crémants she produced (brut and demi sec, white and rosé).

Bruno Mangin, from the brewery La Rouget de Lisle, had the good idea to open a wine bar in the center of Lons. It was time for his beers of character to find their place here (La Millefleur, la Grande Rivière, la Combe aux loups... and "La Marseillaise"). The cellar offers malt-based alcohols (beers, pure malt whisky, rum, vodka) and sodas (lemonades, cola) from its production. Their aromatic flavors are distilled in the glasses served at the bar, on the terrace or on our table. Also on the menu: fine Jura wines and beers from around the world.

For 10 years now, grandson Valentin has been at the helm of the Morel family domaine. 7 ha in AOC Côtes du Jura, farmed organically and biodynamically. The range includes excellent chardonnay, savagnin, pinot noir, poissard and crémants. White and red, then, but also some formidable UFOs like "L'Albinos" (a poissard vinified as a white) and "Savagnin En Bois d'Arnaux" which, conversely, is vinified as a red wine.

We enter Baud's house in an old domain dating back to the 18th century and where 8 generations have succeeded one another. Today, the young people of the 9th generation run the estate. It counts 25 hectares on 3 AOC: Côtes du Jura, Étoile and Château-Chalon. A reasoned viticulture certified Terra Vitis producing exceptional wines. And to complete their work on the land, they exploit some orchards to offer you Mirabelle plum and William's pear brandies.

With his son Joris joining him, Michel Faudot can look to the future with serenity, and continue the dynasty that began in 1879. The medals won each year in the most prestigious competitions are proof of the know-how of this lineage launched by Louis the founder. A specialist of the "melon with red tail", you will also find here a red pinot "cuvée braise d'été" elaborated without sulfite. If you can't visit the cellars, this winegrower's house also has a cellar in downtown Arbois, under the arcades.

With one hundred and ten years of history, this cooperative continues its path with the future of a tradition as its leitmotiv. 65 ha for an annual production of 350 000 litres of wine. 45% of the wine comes from Arbois-Pupillin, 20% from Arbois, 15% from Côtes-du-Jura, 16% from Crémant and 4% from Macvin. The cellars and the bottling workshop are in the centre of the village as well as the tasting room. The tasting room has been thoroughly redesigned for a better reception. Winegrowers for five generations, the Barbe family now farms 26 ha in the Côtes-du-Jura appellation. In addition to white wines, a red Poulsard and a Crémant, the domaine offers sparkling wines with natural aromas of strawberry, blackberry and grapefruit. Last but not least, the family's unconditional love of their region means that they also offer horseback and donkey rides through the vineyards, helicopter flights and hunting and fishing weekends. Domaine Macle is one of the pioneers of organic viticulture in the Jura. It is also a well-established estate, dating back to 1850. Laurent Macle took over the domaine in 1995 and has maintained it as one of Château-Chalon's leading addresses, earning him the nickname of "the pope of yellow wine". 4 ha of the estate's 12 hectares are planted with Savagnin grapes, and the remainder with Chardonnay in the Côtes-du-Jura PDO. Vinification takes place in ^16th-century cellars, in oak barrels of course. A very fine house.

Stéphane Plank, a chef of training, turned to oenology, leading him to the role of sommelier in very large houses before opening this wine bar/shop of wine merchants. This estate, created in 1942, was the precursor of whites with character and single-varietal reds. The Rolet estate is constituted in AOC Arbois, as well as under the appellations Château-Chalon, Etoile and Côtes du Jura. The harvest is done by hand to preserve the terroir as much as possible. Jean-Yves Vapillon remains the only independent winegrower in Rouget de Lisle. His vineyards are in fact spread over three localities. His father was a winegrower in the Beaujolais. Starting with 50 ares in 1994, his estate now has 7 hectares, where the Chardonnay grape is at its best. The wines grow in the depths of the cellars of an imposing winegrower's house. Since 1995, the vines have been cultivated in the most traditional way: cultivated soil, manual harvesting, control of yields.

In 1989, Yves Horde from the Rémois region fell under the spell of Port-Lesney and its vineyards, and never looked back. 2007 marks the start of his winegrowing adventure. A 4-hectare estate (50% in Arbois) spread over 6 different climats: "Chantemerle" in Villette-les-Arbois, "les Fouilles" in Vadans, "Sauvagny" in Arbois, "en Gravelle" in Mesnay, Champagne-sur-Loue and Port-Lesney. It takes a lot of temperament when you're a woman, from Paris and the cinema, to launch yourself into organic viticulture by working with the moon and biodynamics. Catherine Hannoun has done it. Her 3 ha are in Pupillin, in Arbois and on the discreet hillsides of Marnoz. The ploughing is done on horseback. But she is equipped with a modern vat room. In Arbois, she vinifies savagnin, chardonnay, pinot noir, trousseau and poulsard, produces a liqueur wine and a natural sparkling wine. The gateway to the Bresse region of the Jura, this estate dates back several generations. 15 ha in AOC l'Etoile and Côtes du Jura, on the slopes of Mount Tausson. The grandfather Lucien Michel farmed up to 13 hectares. His son, André, joined him, then in 1995, his grandson Jean-François became the manager. This great modest wine shines as much as its white wines (vin jaune, savagnin, crémant du Jura, vin de paille, macvin, chardonnay). The vineyard of the castle of Arlay would be one of the oldest in France. Vines are attested since 1070 at the foot of its fortress. This "Bon Pays" which borders both Bresse and Revermont belonged to the Burgundian counts. From then on, this enclave was called "Little Burgundy" because of the remarkable acclimatisation of the pinot noir grape. The vines are still grown here as they are in this region. The 25 ha estate is still run by the de La Guiche family (Alain, Anne and Pierre-Armand). It was a pioneer in the use of the lyre system.

This craft brewery stands out for the quality of its products, which are all made from local ingredients. His 3 hectares in the Côtes-du-Jura region are devoted to white wines. The maturing under veil of the savagnin has been abandoned. The freshness and minerality are found in 3 categories: classic white in barrels, traminer-type cuvée and November harvest. The Bonnot dynasty has been nestled in this Cluniac site since 1936, but its influence extends far beyond the region. Thierry has been developing it since 1990. This Stellian castle is one of the 5 seigniorial buildings of this village, like the branches of a star. Perched on its hill, the Vandelles have been working the vineyards since 1883. After Auguste, Joseph gave it a real boost. Then it was Georges and now his son Alexandre. The fine, mineral whites from the slopes of Mont Muzard are the excellence of the AOC. For a century, the sparkling wines and then the crémants of Etoile have gained an international reputation, the foam production being remarkable. The still wines are all aged in oak barrels.

This is a beautiful estate that has seen several generations succeed one another since 1859. Valentin took over after Annie and Jean-Claude. This family estate has been handed down from father to son for several generations. Seven generations of Pignier have succeeded one another since the acquisition of their cellar in 1794. The two brothers, Jean-Etienne and Antoine, and sister Marie-Florence work with talent in the 13th century stones of the Carthusian monks of Vaucluse. The 15 hectares have a subsoil of marls of the lias and trias with a strong slope; thus requiring a laborious work. The entire vineyard has been committed to biodynamic farming since 2003. The store's 400 ^m2 are divided into thematic modules: glassware (including beer bottles), party items, alcoholic beverages, whisky and rum cellar, wine cellar. The loose tea and coffee space tickles the nostrils as soon as you cross the threshold. The evenings come alive with tastings discovered during the year. The open house in April is always popular with both professionals and private individuals.

Established in 2007 in an old farmhouse that they converted into wine cellar, Emeric Foleat and Elise Vincent grow just over 3 hectares, mainly in Appellation appellation. Two young people, partners in the life and work of the old vines. Their plots have been planted for at least 30 years (and up to a century). They vinifient all the main Jura grape varieties: chardonnay, savagnin, poulsard, pinot and keyring and also produce crémant and macvin. A multimedalist domain held by two agronomic engineers from Belgium. An originality that also translates into the modernity of their spirit. Wines with desired names, aesthetics, Fabrice and Valérie Closset-Gaziaux are part of a new wave of winemakers who revolutionize the profession. All their vineyards are grown in organic and offer fine, often award-winning wines. A field to discover.

After 10 years as an amateur brewer, Julien Cêtre launched himself into the great bath of professional hops. But not the way a Montbéliard bull could do it. Tired of the "standardised" and in love with foam, the bovine engineering technician is not a little proud of producing "a really good home-made beer". It must be said that his farm receives pure water from the Ivrey spring that gushes from nearby Mont Poupet. It should be noted that his village, with a few dozen souls, rises out of a forest in the foothills of the first mountain plateau. Juju, as his friends call him, is now at the head of 3 permanent beers (a blonde American pale-ale type, a refreshing and fruity white, a redhead with caramelized notes). But the family is growing throughout the year with "ephemeral" beers called "Vachement Noël", "Vachement terrible", "Vachement noir", "Vachement fumée". And if you come in the summer, you will be entitled to the "Vachement Estiv'ale".

Following the example of some colleagues, this exploitation has abandoned the old Arboisian stones to invest in the artisanal zone. Among the Ratte family are the son Quentin, the father Michel-Henri and Françoise whose parents were local winegrowers. They work in "Bio" and "Biodynamics", approved "Demeter". Use for example of horn dung, silica, herbal teas and decoctions for the good health of the soil as well as the 5 vine stocks used. The 9 hectares are spread over 7 of the most popular local climates such as "Les Corvées", "Le grand Curoulet" and "La Bergère". The same rigour comes into play in the vinification and sobriety right down to the labels on the bottles. On the other hand, there are original qualifiers to designate vintages such as this "Aristocratte", a close relative of the Macvin based on "Fine" or even this "Dandy", a passerillé who is not entitled to the title of Vin de paille because it has a titre of 13.7° instead of the required 14. However, you should know that the grapes were dried for 6 months and the juice was aged for 3 years, one of which was during fermentation!

Nadine Labelle and her partner Philippe Paillard consider this activity to be "a popular art". In their workshop, they draw inspiration from different styles to develop their range of beers. You will taste "classics" and special beers depending on the season. Some of them include fruit from the orchard and maturation in Jura wine barrels.
