At the entrance to Chablis, the Domaine Long-Depaquit, its superb château and its vast park with century-old trees is an ideal place for a visit and a tasting. Property of the Bichot family, this is one of the most famous and oldest houses in Chablis. It covers a vineyard of 65 hectares, 10 of which are grands crus and 15 are premiers crus. "La Moutonne" (2.32 ha in grand cru) is its standard-bearer. If the weather is good, a ten-minute walk will allow you to admire a superb panorama of the vineyard.

Les vignes and Céline Côte is a family story, but not only: the young woman studied biotechnology, viticulture and oenology to feed her know-how. This 12-hectare family estate is spread over 4 communes: Beines, La Chapelle-Vautepeigne, Lignorelles and Villy. Founded before 1198 on the Epineuil finage, this estate depended on the Cistercian Abbey of Notre Dame de Quincy, and dominates the village. This major winegrowing dependency of the Cistercian order now has 27 hectares of vines, developed in organic farming and producing Chablis,^1er cru Montée de Tonnerre, AOC Epineuil in red and rosé, and Crémants de Bourgogne. A magnificent place, managed by a real enthusiast. Four beautiful guest rooms are also available.

Winegrowers since the 17th century, these vine lovers have 12 hectares, 10 of which are in the Côte-Saint-Jacques appellation. Harvested by hand, this vineyard has a south-south-east exposure. It leans against the plateau of the Pays d'Othe, and has a soil composed of clay with a high proportion of flint on a Turonian subsoil. This mixture gives it its characteristic flinty taste. You are particularly advised to try their Burgundy Côte Saint-Jacques Blanc, a unique wine (made from a blend of Pinot Blanc and Chardonnay) of which the Vignot family is the sole producer.

All the parcels of the estate are planted within a 2 km radius, in the heart of the historic appellation. Winegrowers from father to son for five generations, the members of the Rigoutat family welcome you to their 14-hectare estate located about ten kilometres from Auxerre, in the heart of the Coulange region. The tasting takes place in a large cellar of 300 ^m2 dating from the 19th century. Burgundy aligoté and of course coulanges (red, rosé or white) are proposed here as well as crémant.

Note that Alain Rigoutat also offers two gîtes (3 épis) perfectly equipped, in a beautiful 18th century building: La Belle Fille can accommodate (on two floors) from 2 to 6 people, Les Rosiers from 2 to 4 people.

The reputation of Sénon's beers extends beyond the borders of the département. Founded in 1996, this craft brewery markets its brands "Thomas Becket" (the authentic ones), "Alesia" (the organic ones), and "Burgundia" (the original ones). In 2023, the highly qualitative "Héritage" was added. Or when the hops of Sençon invite whisky! In 2022, the brewery won no less than 7 medals at the Concours général de Paris and the Concours général de Lyon. Tours are also available.

Dating back to the ^11th and ^12th centuries, these magnificent cellars are a must-see! A family pride perpetuated today by Jean-Louis and Jean-Christophe Bersan, who cultivate 22 ha of vines. They produce several appellations, including Côtes-d'Auxerre, Aligoté, Saint-Bris and Chablis for the whites, Côtes-d'Auxerre, Bourgogne and Irancy for the reds, as well as Crémant and Ratafia. Not forgetting, of course, old Marc de Bourgogne.

Created in 2009, Domaine La Croix Montjoie is located on the slopes of the Vézelien region. The 15-hectare estate is planted mainly with Chardonnay, the pearl of Burgundy wines, and is farmed organically. Numerous awards salute the generosity and excellence of this young domaine's wines. Three flagship productions, L'Impatiente, L'Élégante and La Voluptueuse, plus red Burgundy, Irancy, Ratafia and Crémant de Bourgogne. The estate can be visited for a tasting or a walk in the vineyards to understand the cycle, the terroir and the winemaker's work.

Brown, white, amber, blonde... The microbrewer Odile Bondier can boast of having a production of beers labeled Nature et Progrès which translates its will to reach the "zero waste", in particular through the intermediary of returnable bottles. Its beers are made with local raw materials. The brewer as well as the beers are known for their character and their conviction. To taste her production, you can also go to the market of Avallon.

Existing for several years, the Michel Martin estate offers more than 14 hectares with essentially pinot noir and chardonnay. White, red and rosé, the domain is fully specialized in coulanges, a wine of the auxerrois hillsides immediately recognizable and that you will be able to taste on many tables of the region. Passionate about the fruit of the vines, this beautiful house will share its experience and know-how with you by giving you a tour of its cellar, with a tasting session of course. Christophe Ferrari is unusual in that he was not born into a family of winegrowers. So, since 1987, this passionate winegrower has had to redouble his efforts to offer today (alongside his son Nicolas) several Irancy, Chablis, Saint-Bris, crémants and ratafias. Produced with respect for tradition on 26 ha, the quality of the wines and the know-how are the two strengths of this fine domaine. Proof of this are the numerous awards received. In 2024, four wines received awards from the Guide Hachette des vins, including the Saint-Bris-La-Canne 2022 (2 stars).

This very beautiful estate finds its origins as early as 1620 in Irancy. Today, William Charriat exploits on 13 ha the vines of pinot noir and caesar. In the respect of tradition, with manual harvesting, the precious liquid is matured in oak barrels, two years before bottling. William Charriat's precise work gives these wines a generous taste, the vines benefiting from the clay-limestone soil of the region's hillsides. In the end, the irancy here retains a fruity taste, that of the morello cherry that grows in the region.

A large and beautiful house that draws its origins from the middle of the 19th century. Often rewarded, it offers discerning connoisseurs quality wines with a comforting regularity, reflecting all the expression of the terroirs of the Chablis and Auxerrois vineyards. As proof, these wines can be found in the most prestigious establishments and in more than 30 countries. Among them, signatures such as the Chablis Grand Cru Les Clos "Les Vieilles Vignes". The Pinson family has been established here since the ^16th century. This beautiful 14-hectare estate (HVE label since 2019) produces Chablis AOC, Chablis Grand Cru and Chablis^1er cru. Boasting 9 references expressing fruity or more mineral characteristics, and always with strength and finesse, it has received numerous awards, including two silver medals at the Concours des vins de Chablis 2024 for its Chablis 1er Cru La Forêt 2022 and Mont de Milieu 2022. An excellent address. You'll be welcomed in a small cellar dating back to the house's beginnings. A must-see!

Everything here is steeped in history. The Goisot family already owned vineyards in the ^15th century. However, it was in 1947 that Serge Goisot launched production. Since then, this passion has been passed down from generation to generation. Anaëlle Goisot and René Grivot now produce (on 27.5 hectares) Chablis, Chablis Premier Cru, Saint Bris, Côte d'Auxerre, and Bourgogne Aligoté. The Domaine has been awarded the Haute Valeur Environnementale label. And its Saint Bris Héritage "Cul Rouge" 2020 was awarded the Gold Medal at the Concours Mondial du Sauvignon 2022.

Since the estate was founded in 1690, generations have succeeded one another, always cultivating unparalleled standards. Today, Domaine Félix farms 32 hectares in the Saint-Bris, Irancy, Auxerre and Chablis appellations. As for its track record, it's more than rich! For example, his Irancy La Grande Côte Est 2020 won a gold medal at the Concours Général Agricole de Paris 2023. Born in 1986 in the commune of Courgis (between Auxerre and Toucy), the estate gradually expanded to include the communes of Beines and Chablis. Farmers from father to son for four generations, the Calmus family didn't start making wine until 1998. A young estate (which today boasts 4.5 hectares of vines stretching across the hillsides of Joigny), but one that is already playing in the big league. With a number of prestigious awards under its belt. These include the 2013 Brennus d'Argent for their Bourgogne Chardonnay 2010. White, red, rosé and gray wines, as well as crémant, can be found at the Joigny market on the first Saturday of every month.

Spreading over 9 generations since 1780, the Domaine de la Meulière covers 25 hectares, for an annual production of about 180 000 bottles. The Laroche family perpetuates the traditions, and all the stages of production are carried out on the estate. Petit Chablis, Chablis and Chablis^1er Cru have received numerous awards. And, on the Auxerrois side, a Saint-Bris, a Bourgogne Blanc and a Bourgogne Côtes d'Auxerre as well as a very good ratafia, and grape or cherry juices... all homemade! Situated in the small village of Irancy for four generations, the estate (11 ha) produces wines (in organic agriculture, labelled AB) mainly from the pinot noir grape variety.
