Read moreClos Fardet is the oldest winery in the village of Madiran, which gives it a little extra soul. In 1998, Pascal Savoret took over the reins of this family business. He lovingly watches over his great-grandfather's vat-press, a rarity not found elsewhere. With this manual tool from 1923, he continues to make the main part of his wine making. Named Bows -for Brave Occitan Wild Spirit-, this company feeds its stills with cereals grown nearby, in the South-West of France, and malted in Salvagnac in the Tarn. In his barrels, collected in the cooperage of the region and the vineyards of the corner, ages also a whisky, which will officially bear this name at the end of three years of maturation.
