A trailer on top of a field on the Saint Girons-Foix road? What is it? It is the den of Christelle Record, a farmer of calves under the mother's milk, always engaged in the promotion of short circuits and fervent defender of the better and local consumption. She worked hard during the confinements and now she is in charge of this trailer/grocery store. 145 producers, which shows that Ariège has a beautiful diversity and that one finds in the caravan salted and sweet groceries, fresh and organic vegetables, meat, delicatessen, cheese, eggs, drinks...

The interior of this brewery-restaurant, created by Yannick Metge, has been enlarged and is now a real success. In a neo-industrial setting, the microbrewery is housed in a former iron workshop. We're at the heart of local consumption, with beers brewed on site, and tapas and burgers concocted with local produce. At 12 noon, the traditional slate-style cuisine is top-notch. Why the fork? In Occitan it's called foueich, which gave rise to... Foix. A must-visit address. Soon to open as a coworking space!

The Vignécoise Farm is at the same time breeding, workshop of transformation and canning. To visit the Coustalat house in Vignec is to discover the real products of the soil in situ. Here, the black pig of Bigorre snorts in the nature to be transformed into terrines, sausages, ventrèches, hams, confits... All the products are sold in the store along with cooked dishes such as garbure or daube or fattened duck specialties from the neighboring Gers. Everything is excellent and you will not leave here without some souvenir jars.

A very pleasant tea room opened since 2008 where you can also taste, in a cosy atmosphere, an excellent vegetarian cuisine and acquire the best organic teas of the moment. Of course, the Artigarrède house is an exceptional pastry that puts on a handmade craft and treats the greedy. But we are not going to lie here, what we love, that we love, that we know, is the famous Russian! Almond biscuit biscuit, topped with a praline cream and a little more that passes from generation to generation, this jewel of gastronomy is here at home. A family case if it is, the cake follows a recipe dating from the th century and holds its name of the ingredients at the time imported from Crimea. In 1925, Adrien Artigarrède added her personal touch and opened his first boutique in Oloron-Sainte-Marie: success is at the meeting. Today, it is his grandson Jean-Paul Bassignana and his great grandson that perpetuate this béarnais, white symbol, such as snow-capped summits, which even has chocolate and coffee flavours. The Rosquille, another emblematic speciality, uses the Pyrenean tradition, this dry cake associated with the white wine of Jurancon was once the festive dessert of the Mountaineers to discover with another flagship signed Artigarrède, the Muscadine, truffle to praline!

At Flocons Pyrénéens, the specialty is... the flocon! This fine dark chocolate praline enrobed in soft meringue launched the success of this house, which has been creating irresistible creations since 1994. You can also try Béret, a 60% cocoa blueberry ganache with a hint of Espelette pepper, or Aure pearls and truffles with blueberry or raspberry pulp. Throughout the year, new products follow one another. Some fifty chocolates take their place alongside our emblematic specialties. A real delight!

The Maison Dauba is a magnificent surprise. The best of the sweet gastronomy is there with: local delicacies like the pebbles of the Gave, original chocolates like the sparkling pearls, but also the favols, jams to accompany the cheeses. On the savory side, you will find balsamic vinegar pearls with truffles, rare oils, rillettes of the sea, chestnut veloutés, cold cuts and risottos... Wines, beers and daring aperitifs also stand out.

For more than 30 years, the cannery has been making a wide range of local products: foie gras, confits, pâtés, rillettes, ready-made meals and gourmet specialities. The duck rillettes from the Pignols cannery were awarded the bronze medal at the Paris agriculture show. At the Cannery, you can attend a demonstration of cutting up a duck and making a foie gras.

At the exit of Bagnères-de-Luchon, the Miellerie des Sept Molles is a honey producer since the beginning of the 60s with more than 700 hives. You can visit, discover the job and a store offers all the products of the hive: pollen, royal jelly, gingerbread, propolis-based products... This local speciality can be found at a... delicatessen! The talented Bonnefous family, Jacques, Marie-Josée and their daughter Françoise, are passionate about quality and respect for the best products. They are the only ones to perpetuate this ancient recipe of the legendary Lauzerte macaroon known since the 11th century. This macaroon does not resemble in any way these small fours stilted in their shell of ice. With their ripe wheat colour, they are cracked on the outside, soft and full of sweetness on the inside. The almond flavours take our soul back to childhood.

Place de l'Estrapade, in the Saint-Cyprien district, is a store that Toulousans love: gourmet, friendly and surprising. Gourmet, of course, because it's first and foremost a chocolatier. In the heart of the pretty village of Lannepax, the Delord house has been distilling exceptional armagnacs since 1893. Founded by Prosper Delord, itinerant distiller and cellar master, the company is now run by the dynamic tandem of his great-grandsons Jérôme and Sylvain who, while passionately preserving the treasure of a family know-how built up over four generations, are bringing it fully into the modern age. The vintages, as well as the skilful blends slowly matured in the beautiful rooms of the cellar, enjoy an international aura.

Bought at the beginning of the 20th century by the Gessler family, it is now Vanessa and Kevin, representatives of the^4th generation, who have the reins of the Domaine de Joÿ. The Gesslers have always been lovers of white wines, and they bring out the best in traditional grape varieties with great delicacy. Low-pressure pressing, fermentation in temperature-controlled vats and air-conditioning in the winery allow the wine to be matured gently and no sulphites are added. Folle-blanche and baco are also grown to produce the famous armagnac.

Since 1883, Armagnac has been at the heart of all our attention. The know-how acquired and passed on for more than 130 years has allowed us to build up a collection of the best eaux-de-vie, as the house relentlessly scours the lands of Armagnac to unearth forgotten treasures in the estates. Nowhere else in the world will you find such a wide range of old vintages. But sometimes you have to be prepared to pay several thousand euros for a bottle of the oldest armagnacs! Located in the ^19th century château de Capdeville, this tasting and sales area serves as a showcase for the AOP Fronton appellation. Very aromatic wines made from a local grape variety, the négrette. Three wines for free tasting each week, nearly 150 references belonging to the different domains of the Fronton appellation. Hiking, music in the vineyard, exhibition, wine and chocolate tasting... Fronton can be consumed without moderation or almost!
