After years of traveling the world and working in renowned establishments, he decided to set up his own high-end cocktail boutique in the French city of Episcopale. The 19 members produce, good year after year, around 2 000 hectolitres of red wine, 300 hectolitres of rosé and 50 hectolitres of white. Guided by Alain Montrozier, the cellar constantly improves its wines and even enriches its range. A brewer in the Tarn ? Yes, you read that right! This micro-brewery was born from the passion of Stéphane, who is hopped from head to toe. He will tell you the techniques of beer making in the middle of his machines, which are also very artisanal, and will teach you how to taste a beer, as one does with wine. Libertine (blonde), Clandestine (blonde), Délinquante (brown), Tout ô black (brown), Bulles de Vignes and Vent d'Ange (2 gueuze type beers), these beers have the "Nature et Progrès" label. A new activity, since 2019, for this family of farmers who have been producing wheat, barley, soya, lentils and chickpeas for three generations, and who also cultivate 5 ha of vines.

For more than 100 years, the Biscuiterie Deymier's production of scalded biscuits has been elaborated in a small family workshop, where each cookie is unique, shaped by hand, before being poached in hot water and then baked. Charles Deymier decided to rework the traditional recipe of these aniseed cookies in his own way by adding sugar, which he patented under the name "Charlot" eleven years later. In the heart of the Haut-Languedoc Regional Nature Park, at an altitude of 1,000 metres, lies the source of Mont Roucous mineral water. This precious resource was discovered in 1973 by Joseph Combes, a native of Lacaun convinced of the benefits of this water, which was recognized as a "natural mineral" in 1993. Thanks to its low mineral content, Mont Roucous water is suitable for all ages, without exception. Once owned by the Danone group, Mont Roucous is now the property of Jean-Claude Lacaze, an entrepreneur of Tarn origin.

Christine and Richard started their business on a farm 6 km from Murat. With their son Martin, they run this workshop at the entrance to the village. Behind the scenes, they work cheerfully on veal, beef, pork, rabbit and tripe. In the shop windows, you'll also find specialties and stews such as fromage de tête, blanquette de veau and charcuterie. All products from Laurent Cazotte's artisanal distillery in Villeneuve-sur-Vère (which can be visited) are produced using the passerillage method, and have become a benchmark in their field. This simple yet complex technique is currently unique in France. Fruit destined for distillation is harvested, then laid out in the open air for four weeks to concentrate its flavors. Label Rouge and IGP pink garlic, but also black garlic obtained after a month's maturing.

Yves Thuriès, a local boy and modern-day businessman, is a chef-patissier-chocolatier, member of the French Culinary Academy, and several times Meilleur Ouvrier de France (pastry chef-chocolatier-confectioner and ice-cream maker). His head office is located in Marssac-sur-Tarn. This large workshop is the setting for the production of his fine chocolates. You can discover them in store, or order them online from the website.

Produced from generation to generation by passionate salami makers, Lacaune salted meats are sold throughout the South-West. The sausages and hams of Lacaune PGI are carefully selected and dried in the heights of Lacaune, in the traditional know-how. Subtly salted, peppered with a touch of nutmeg, gourmets appreciate them for their unique flavor. Among the specialties, we also find the "bougnette", a large ball made from pork belly, and the Melsat and Galabar blood sausages.

Ernest Oberti started his activity in 1956 as a charcuterie dealer with his wife Georgette and their van, with which they went to the local fairs and markets. In the 1970's, they started to produce their own cured meats in the basement of their house. With partner pig breeders based in the Tarn and neighboring departments, Maison Oberti has always relied on local and short circuits. Today, it has an impressive record of medals at the Concours Général Agricole in Paris.

Gala, Golden, Topaz, Fuji, Opal... Josy, Christian and Nicolas have created a real apple paradise. On their small farm, they produce many varieties and sell them in a responsible way, always ready to guide you in your choice. On the spot, they offer apples of course, but also juices (apple and pear), William pears and apple sparkling wine. Located on the apple hillside, their farm also has an incredible gite, fully equipped, particularly pleasant.

Located at the foot of the Montagne Noire, Ferme de Bonicarde raises pigs in the open air, just like in the old days. The charcuterie and various processed products on offer will take you back to forgotten flavors. Cathy's traditional specialties include chestnut pâté, liver mousse with Roquefort, rolled brisket and knuckle of pork with walnuts. Perfect for treating yourself or as a gift! Marché au gras : this market is a showcase for regional know-how, with stalls featuring duck and foie gras. It takes place on Saturday mornings from 7am to 1pm on the Quai Tourcaudière (mid-November to mid-April).

The renaissance of the Domaine d'En Segur is due to the famous pharmacist Pierre Fabre. He acquired the land in 1989 and decided to replant the vineyard. Since 2017, oenologist Lionel Barre has been in charge of the estate. The vines are planted overhanging the Agout river, on terraces of gravel covered with silt and pebbles. The fruit of this crossroads of Mediterranean and oceanic influences, the domaine produces powerful red, rosé, dry white and sweet wines. The domaine has its own cellar and online store.

The farm has been in existence since 1948 and is now in its third generation. About ten kilometers from Alban, make a detour to come and discover and taste these sheep's cheeses with sweet, fruity, full-bodied or even sweet flavors in this farm that celebrated its 30th anniversary in 2019. From grazing to maturing, the watchword here is cheese! You will also find ewe's milk yoghurts, dessert creams, lamb meat parcels, milk jam, sweet curd, ewe's milk pastries such as pomelets or flaune... The Canto Perlic estate is perched on the gentle hills along the northern edge of the Tarn valley, just 6 km from Gaillac. Braucol, mauzac, loin de l'oeil and duras flourish here on 8 hectares of vines in organic conversion, in an eco-responsible approach for an estate turned towards sustainability. Poets will be delighted to learn that the estate's name means " partridge song " in Occitan, a partridge you'll recognize on the labels of several of the cuvées offered by this family-run estate.

Facing south and benefiting from a microclimate typical of the "little Tuscany" of the Tarn, the Barreau family's vineyard produces remarkable white, rosé and red wines. Their bottles are easily recognizable by the vine leaf on the label. If you need any other information to convince you to go and discover this Gaillac estate, you should know that the production of Domaine Barreau is marked Vigneron Indépendant, emblem of a family of responsible professionals who respect tradition.

This 20-hectare vineyard and olive grove has been producing nectars for about 15 years. It all began with the arrival of Christophe Merle, from Charente, in Gaillac. This region, particularly renowned for its vineyards, seemed perfectly suited for this professional to express his passion. In 2006, with his wife Christelle, they gave birth to this choice estate whose first vintage was released the following year. Since then, Château Balsamine has become a regular on the tables of gourmets and restaurateurs.

Driven by an all-consuming passion for pretty things and authenticity, she brings this pretty boutique full of gifts to life. In 2021, Émilie and Damien celebrated the fifteenth anniversary of their brewery in the Tarn. This beautiful success story of the department is the perfect ambassador of the local know-how and the love of good things. Blonde, white, brown amber, triple, IPA, seasonal beers, there is something for every palate! Since 2014, the brewery has also offered non-alcoholic drink ranges (craft lemonades, cola, peach tea). In 2018, Oxit moved to premises better suited to its success. This new space also hosts a bar and afterwork area.

ELSAIL was born of a consuming passion for black garlic. Its benefits seduced Florence Marco, who wanted to share them with others. Considered a super food and a super ali-cament, its production is meticulously managed. Black garlic is obtained after 45 days of ripening, followed by 30 days of maturing of Label Rouge Lautrec pink garlic. She recommends regular cures of one to three months, twice a year.

This typical production of the Tarn is said to be sweet and subtle and its aroma does not attack the taste buds. It is perfect for all dishes, with a fine flavour. This seasoning, which is currently experiencing exceptional excitement, is of course the Rose pink garlic. It has to be said that he has many qualities, as he is also known for his great conservation faculty - he can keep dry from one harvest to another. In fact, it's a stick garlic, which explains its traditional cluster (or manouille) conditioning. Its beautiful colour comes from the fact that the enveloppe envelope is pink veined. Its culture developed from the Middle Ages in the region, until the 1950 s, when farmers decide to highlight this pink gold. A Red Label was obtained in 1966 and, in 1996, the Protected geographical indication of the European bodies. As a consequence of this success, production today reached nearly 800 tons per year and 179 producers cultivate Lautrec rose garlic over 360 hectares. In Lautrec, we celebrate every year, the first Friday in August!
