Maison Chanson that has existed since mid-18th century is set on the historical site of the Oratory bastion, one of the ancient defensive towers of the city of Beaune, a former military buildings built in the 15th century. Since 1999, Chanson belongs to the Champagnes Bollinger family group. Chanson produces more than one million bottles per year on more than 100 appellations, distributed between Beaujolais, Mâconnais, Côtes de Beaune and Côtes de Nuits and Chablis. The wines of the estate are produced from the 45 ha of vineyards whose group is owner in Côtes de Beaune, with a majority of Premier and Grand Crus. These vineyards, in reasoned culture, provide 25% of the supplies, other grapes come from harvest made in the climates of the partner wineries. The d'Ardhuy family owns 42 hectares of vineyards in Burgundy, stretching from Gevrey-Chambertin to Puligny-Montrachet. The domaine produces wines that respect the terroirs of its 35 appellations (including 6 Grands Crus, 15 ^1ers Crus and 12 villages). In 2009, the 42 ha estate switched from organic to biodynamic viticulture. The d'Ardhuy family also owns a vineyard in the Rhône Valley under the Châteauneuf-du-Pape, Massif-d'Uchaux and Côtes-du-Rhône-Villages red and white appellations produced by Domaine de la Cabotte, itself biodynamic since 2007. The estate exports to Japan, the United States, Great Britain and Belgium. In France, priority is given to the development of wine tourism. A large family business, born in 1898, specialized in sparkling wines. Its 250 ha of vineyards cover 6 different terroirs producing numerous crémants of Burgundy appellation as well as more prestigious crus: brut blanc de blanc, vintage, grande cuvée, organic. The guided or audio-guided tour reveals the workshops, cellars, robots and automatons. Prosper Maufoux, property of the Piffaut family since 2010, custodian of a two hundred year old family wine tradition in Burgundy, leaves Santenay to settle at the Château de Saint-Aubin. Today, the wine sector covers about 98 hectares and is known as one of the most important in Burgundy. It offers a wide range of designations: Chardonnay Old Vines, Mercurey, Clos La Chaise Dieu in monopoly and first two vintages of Santenay for whites. In red, you have the choice between two first Beaune Beaune, two first crus santenay, one Pommare, one Aloxe Corton and one big cru, Le Clos de Vougeot. Created by the Mercurey defense and management organization (ODG), Caveau Divin is the showcase for the Mercurey AOC, which celebrates its 100th anniversary in 2023. After having represented Burgundy's wines for twenty years, Yvonnick Debray bought a vineyard in 2006. The 1,000 m²-fermenting room and cellars are situated in the heart of Beaune, at a stone's throw from the hospices. Between properties and marketing grapes from a reasoned culture, it is the equivalent of 20 hectares of vineyards, spread over Côte de Nuits and Beaune that are transformed. The wine-making is entrusted to Jean-Philippe Terreau, a cellar master whose experience guarantees the elaboration of quality wines.

The typicality of each area is respected, and it is as many whites as reds that are offered. In this hamlet of Tonnerre, Emeline Rouyer welcomes you since she recently took over from her parents. Passionate farmers who created everything with their own hands, they planted their first vines in 1990 and harvested their first grapes in 1995. The vineyards of Tonnerre, destroyed by phylloxera, were reborn in the late 1970s with a strict selection of terroirs and the replanting of noble grape varieties. Following in her family's footsteps, Emeline skilfully combines modernity and tradition to produce surprising, feminine wines...

The first vines of the Maison Jadot were planted in 1826, three generations of this family succeeded there. In 1984, Jadot became an American property but retained its Burgundian soul. Today, Maison Louis Jadot controls 220 hectares in Burgundy, including 80 in Beaujolais. Since the spring 2013, Maison Louis Jadot has been open to individuals. Its shop is installed in the north of Beaune, in the heart fermenting rooms. The architecture of the fermenting room of Rouges is impressive; it is reminiscent of a cathedral. That of the white, equally large, is more contemporary and contrasting sharply with the previous one. The long raising cave of a hundred metres, houses nearly 4,000 references. The tasting that closes this memorable visit allows you to discover the Louis Jadot wines. The tours are only in small groups; the shop is accessible without the visit.

The wines in this area are high with great know-how. The land covers several municipalities: Meursault, Volnay, Pommare, Beaune, Auxey-Duresses, Saint Romain and Savigny. Many prestigious municipalities are therefore represented in white and red. Moreover, the estate produces excellent red wines Volnay, Pommare and Beaune 1 ^st cru. The most numerous are the 1 ^st cru Volnay coming from different climates: Clos des Champans, Cellars, Le Village… Given the notoriety of wines, prices remain affordable. This four-generation family estate south of Chablis is run by Olivier and Isabelle Boussard, joined by their daughter Margot. The estate covers 23 ha of vines producing AOP Chablis, Petit Chablis, Bourgogne white, red, rosé and Crémant de Bourgogne. You'll receive a warm welcome in their renovated farmhouse. Located on a farm that once belonged to the Abbey of Flavigny, this 14-hectare estate boasts vines between Alesia and Caesar's former camp, facing south-east, on hillsides and pruned in a lyre shape to withstand the harsh climate. White grape varieties: Aligoté, Chardonnay and Auxerrois, and red grape varieties: Pinot Noir, César. Signature rosé is the estate's specialty. Made from Auxerrois, Pinot Beurot and César, it releases notes reminiscent of Provençal wines. A real marvel!

Created in 1978 by Jean Jacquin, it is now Jean-Michel (one of his sons) who is at the helm of this beautiful family estate of 7.6 ha (including 3.85 ha in 1er Crus and 4 ha in Chablis). Here, the wines are vinified then bottled at the domain in the purest tradition and in the perfect respect of the soils and the natural processes. Alain Gillon, a farmer from the Châtillonnais region, started out in viticulture in 1995 with his brother Patrick. Julien and Romain, their respective sons, took over the reins of the family domaine, investing heavily. The estate is set in a superb location, in the heart of the village and on the banks of the Seine, and comprises just over 9 hectares of vines. Always on the lookout for something new, the owners are currently making a Crémant blanc de noir and an oak-aged white wine, both of which will be available in 2025.

Domaine Boussey Laurent is a winery located in Monthelie, near Meursault in Burgundy. With 14 hectares of vines and 24 different appellations, the domaine offers a wide selection of red and white wines. Next to the Notre-Dame Basilica, the Maison Joseph Drouhin Oenotheque is located in the magnificent building of the former Parliament of Burgundy. This building, which dates back to the 12th century, is worth a visit and the marble plaque on the pediment speaks volumes about its historical past. Once through the airlock, you enter a sublime room where the stone columns support a vaulted ceiling, a luxury case for haute couture wines. The oenotheque is the showcase for the wines of a world-renowned estate. Founded in 1880, the estate is still run by the same family. The family is committed to perpetuating the tradition by ensuring each step of the production, from the work in the vineyard to the promotion and export. In short, this place is a sumptuous boutique where you can offer yourself one of the 90 Joseph Drouhin appellations, including some old vintages straight from the reserve. To say that the Roy family is rooted in the Chablis region is an understatement! In 1810, Pierre Roy was a winegrower there. One hundred years later, his descendant Fernand created the estate. Passed down from generation to generation, Benoît Sordet, owner of Domaine Coste-Caumartin continues to keep this 13-hectare estate alive. Concerned about the environment and biodiversity, the estate has obtained the HVE (High Environmental Value) level 3 label, as of the 2019 vintage harvest. This distinction is a guarantee of quality work that allows the vine to flourish. We find among others Saint-Romain, Beaune^1er Cru for the whites and in red of Pommard and Pommard 1er Cru of which "Le Clos des Boucherottes", Clos in monopoly. Régis Parigot and his Son Alexander are at the head of an area created in 1960, but they come from a long family experience in the wine world. It is located at the entrance of the village in a magnificent building inviting to the stage. There are no fewer than 18 ha of vines spread over Pommare, Savigny, Beaune, Volnay, Meursault, Chassagne and Meloisey in the Upper Côtes de Beaune which are exploited, 80% of them red. The area works in reasoned culture, without herbicides, the cellar and cellars are installed on the spot. Come and discover and taste their first 7 vintages of the catalogue whose prices all soft between 20 and 30 € will seduce you. 

Thiebault Huber, who created his estate in 1994, is not a young estate, since his history goes back to 1926. The estate is located in magnificent premises at the northern entrance to Meursault, where the winery, cellar and tasting room are grouped together in a modern building. The 9.5 ha of vines have been organically grown since 2001, controlled and certified by Ecocert since 2005. The organic wines are both whites and reds, with appellations ranging from Mercurey to Pernand-Vergelesses, via Puligny-Montrachet, Volnay and Meursault.

Domaine Houblin-Vernin has been established here in Migé for over 40 years, and is now run entirely by Valentin Vernin. Long committed to protecting the environment, he cultivates the 20 hectares with the utmost respect for nature. As proof of this, the estate has obtained Haute Valeur Environnementale (HVE) level 3 certification, the highest level of environmental certification for farms. The result is a superb production of Bourgogne Coulanges-la-Vineuse Red, White and Rosé, Crémant and Ratafia.

Sylvain Pataille has built up his estate, and thus his excellent reputation in the Côte de Nuits, through sheer determination and passion. This consultant oenologist knows how to work his vineyard as well as to tell you its history. With 14 hectares worked in the best possible way, respecting the earth, Sylvain Pataille works his wines biodynamically, and raises his vintages with the patience that one has for a growing child. When he is not in the cellar he is in the vineyard, so to come and discover one of these Marsannay wines, the appointment is essential.

Established in the Chablis region for three generations, Domaine de Chantemerle was founded by Adhémar and Marguerite Boudin, then taken over by their son Francis, before their granddaughters Angélique and Virginie took over. The 20.5 ha on which it extends are divided into 4 crus: Petit Chablis, Chablis, Chablis^1er cru Fourchaume, and Chablis^1er cru Homme Mort. The harvests are vinified on the spot, and matured 9 months in enamelled vats. The whole offering a very nice production which has long since proven itself!
