May-Line, a dynamic young woman and heiress of a family of winegrowers from a Vosne-Romanée estate, was in charge of the Caveau de la Chouette before the place was taken over in April 2019 by Brian Verpeaux. While keeping the identity of the establishment, its new owner, who has made his mark in London and Paris, has adapted the concept to a wine and cocktail bar, refocusing its menu on 100% Burgundy wines. Located on rue de la Chouette, a stone's throw from the Square des Ducs, it's an opportunity to take a short break on the terrace to taste local and natural coffees, like those found at the Caféothèque in Paris. The menu is renewed every three weeks and the espresso, whether lungo or ristretto, costs two euros. The icing on the cake is that the house offers green coffee and infusions made from coffee cherries. Jean-Baptiste is still inspired by his trips to Italy to compose his menu, with for example the delicious Bicerin from Turin. The Comptoir des Négociants is not a bar like any other despite its institutional past as a PMU bar. It is a café, a store of good things and a place of exhibition. You can have a snack break with Daniel Le Poupon's pastries, or an aperitif break with a cheese and charcuterie board. Most of the drinks served, wines, beers, absinthes, lemonades, fruit juices and other mineral waters, are of regional production and mostly sold at the Comptoir.
