Here's an address widely acclaimed by the people of Tonnerre, and with good reason: after a notable stint at the Plaza Athénée and the Taillevent cellar (no less!), sommelier Patrice Vidaller decided to settle in Tonnerre a few years ago. His ambition? To introduce visitors to exceptional wines and spirits, as well as more affordable, quality wines. Of course, his advice is always top-notch, and so is the atmosphere. Les vignes and Céline Côte is a family story, but not only: the young woman studied biotechnology, viticulture and oenology to feed her know-how. White, red or rosé, in the wines Céline offers (all 100% organic), we find grape varieties such as Chardonnay, Pinot Noir, Tonnerre wines and elegant épineuil. Of particular note is the Destrier 2017 cuvée, which was worked with the Comté mare Absynthe on an old vine. An authentic wine, "sincere and faithful" like the mare. In short, an estate to be discovered.

DOMAINE BAUDOUIN MILLET

If the Beauceron Philippe Millet settled at the Marcault Farm in the middle of the 60's, he only created the Millet Estate fifteen years later, as some of the land he cultivated in cereals was eligible for different AOC of the Chablis vineyard. Since then, Philippe has left the reins to his children Paterne and Baudouin, who now cultivate 14 hectares, including 9 in AOC Petit Chablis, 4 in AOC Chablis and 1 in AOC Chablis1er Cru Vaucoupin. These are excellent wines, which have won several awards, and which we can only recommend to you.

LE CELLIER

There's no need to visit the Hôtel Dieu to take a break in this 18th-century vaulted cellar. The site's reception area is also a wine cellar, with around a hundred references available as well as local products. Taste the epineuil, and especially the very local Hospices de Tonnerre cuvée Marguerite de Bourgogne 2020. Plates of local produce (Chaource, charcuterie, etc.) are also available, to be enjoyed in the dining room or on the pleasant terrace. Finally, food and wine pairing workshops are organized on a regular basis.
