Nicolas Vanaise is named after his great-great-grandfather, who opened a patisserie-chocolaterie in 1854. Born into a family with a passion for art and history, he naturally became an art historian, archaeologist... and chocolatier. His creations are inspired by his travels (the Near East, Asia, Europe), history - like his Galla Placidia praline flavored with colatura (fermented Roman sauce) - or encounters. His pralines reveal astonishing ingredients: frankincense, myrrh, amber, smoked salt... A resolutely personal gourmet itinerary!
