Since 2020, chef Florent Colombo has set up shop at Les Halles de Dijon to offer gourmets a quality catering service. Sophie and Maud will be delighted to tell you all about their homemade pies and succulent jambon persillé. In addition to pike quenelles, black pudding and blanquette, Côté Colombo offers a range of delicatessen products, from jams and honey to tea, oil and dried morels. The range of jars (cassoulet, homemade parmentier) is made from fresh seasonal produce.

While in Dijon, Côté Colombo offers a gourmet stopover under the Halles centrales. Chef Florent Colombo honors regional flavors with cuisine prepared using local, seasonal produce from short supply chains. The menu features Burgundy specialties such as homemade pies, parsley ham, pike quenelles and black pudding. The restaurant also features a delicatessen, with a selection of honeys, oils, flours, artisanal jams and exceptional teas. Prepared dishes in jars are also available, such as cassoulet or parmentier, so you can extend the culinary experience at home. Côté Colombo is aimed at those who wish to discover or rediscover Burgundy gastronomy through quality products, in a warm and accessible setting.
