Panacea is in fact part of the Filiera della Farina di Stupinigi, a social cooperative that produces flour in a natural way not far from Turin, and then makes bread with natural leaven (here called pasta madre). The employees will be happy to explain this process to you.

His little corner in Testaccio was so successful that it went on to conquer the whole of Italy, and even the world, as a Trapizzino opened in New York. But what exactly is a trapizzino? It's a hybrid between the tramezzino (a sandwich made of triangular sliced bread created in Turin last century) and the pizza. The closed-triangle pizza dough is stuffed with good recipes simmered in steaming pots: chicken cacciatora, polpette, parmiggiana... Delicious, cheap and nutritious!
