Kölsch is not only the name of the city dialect. It is mainly that of brewed beer in Cologne in 32 private breweries (no less!). This light, light and shallow beer is served in high glass glasses called Stange. The boys serving the Kölsch, the Köbesse, are dressed in a traditional suit: large apron of blue canvas and wide black wallet with belt. They supply big drinkers using round aluminium baskets where the Stangen are laid.
