LA RÉPUBLIQUE DÉMOCRATIQUE DU JAMBON (RDJ), a small jewel of the Eastern Townships, is a small artisanal salting shop established in Sherbrooke that prepares charcuterie with a unique taste, without the addition of chemical agents and with respect for the raw materials. Raw, unrefined products prepared with quality meat from local producers. The CENTRAL kiosk is a showcase for the know-how of RDJ's charcutiers. It offers sandwiches and platters of cold cuts, as well as a counter of pork cuts and some cheeses to take away.

Popular Montreal restaurant Kamehameha is opening its second Hawaiian snack bar at CENTRAL to offer tasty, light and fast food inspired by the surf culture found on the northern island of Oahu. Heirloom is a neighborhood pizzeria located in Hochelaga-Maisonneuve. They put forward quality products while respecting the ancestral traditions that characterize the Neapolitan type of pizza. It was in 2014 that two Bretons had the bold idea of importing the famous Galette Saucisse, commonly known as the "Breton hot dog" by Montrealers, a staple of Rennes street food, to Montreal.
