Halfway between tradition and innovation, Štangl sublimates Czech cuisine with refined dishes and a contemporary ambience.
Above the excellent Eska café-bakery, one of Prague's most ambitious eateries has just opened: Štangl. The Ambiente Group is behind it, of course, with chef Martin Štangl at the helm. The setting is modern and elegant: a dozen tables around an open kitchen. The culinary approach strikes a balance between tradition and innovation, with numerous references to Czech cuisine and bold, creative creations. Throughout the meal, it's an experience of discovery and wonder.

Štangl, a gourmet restaurant located in Prague's Karlín district, uses local ingredients sourced from fields and nature, works with precise fermentation techniques and prepares each carefully crafted dish in a sustainable manner. This is the hallmark of Štangl, a gourmet restaurant located in Prague's Karlín district. The kitchen team is led by Martin Štangl, long-time chef of Eska, a Michelin Bib Gourmand award-winning restaurant.
At Štangl, guests can choose from three- or six-course seasonal dinners with the option of wine or soft drinks pairings from Tuesday to Saturday. Each dish highlights a key local ingredient. "Our dishes may look simple, but their preparation is nothing of the sort. We focus on taste, texture and unique, non-reproducible moments," explains Chef Martin Štangl.
In the kitchen, the chefs have a hydroponic system for herbs, refrigerators for fermenting and blackening ingredients, a fermenter for growing molds and a refrigerator for maturing meat. On Štangl's wine list, you'll find a diverse selection of natural wines, many proudly from Czech and Slovak winemakers.

chaque plat est créatif et brillant, et les accords sans alcool sont la cerise sur le gâteau, ajoutant à l'expérience globale.
en outre, bien qu'il s'agisse d'un menu de six plats, si l'on inclut les spécialités non comprises dans les plats et le coffret cadeau que nous avons reçu à la fin, nous avons en fait eu droit à une expérience de dix plats, sans compter l'apéritif.
je reviendrai sans aucun doute lors de ma prochaine visite à Prague.
