For more than twenty years, Cap Créole has specialized in the production of smoked fish from the Caribbean (rillettes, marinated, smoked). The head office is located in Guadeloupe in a privileged fishing area for deep sea fish: marlin, king mackerel, tuna and sea bream, directly supplied by local fishermen. The species are selected for their flavor, before being transformed into smoked fish according to the traditional methods of brining and smoking.
