A Marseilles-based candidate on M6's Le Meilleur pâtissier in 2017, Sylvain Bourletsis set up his artisan biscuiterie in 2019. There, he revisits Provençal sweets to taste: navettes marseillaises, croquants aux amandes, colombier de la Pentecôte, macarons... and also canistrelli, amaretti, montecao, madeleines, sablés, financiers. At Christmas, his pompe à huile and gibassier are the must-have 13 desserts. Sylvain also works with chocolate, from the finest vintages, and people come from far and wide for his personalized bars and chewy cicadas.
