Marseille candidate of the show the Best Pastry Chef on M6 in 2017, Sylvain Bourletsis created his artisanal cookie factory in 2019. There he revisits the Provencal sweets, Marseilles shuttles, almond crunchies, dovecote at Pentecost, macaroons ... and also canistrelli, amaretti, montecao, madeleines, shortbread, financiers. At Christmas, his oil pump and his gibassier are the must-have of the 13 desserts. Sylvain also works with chocolate, great vintages, people come from far and wide for his personalized bars and his cicadas to crunch.
