On the plate, tatin of candied onions and oyster mushrooms, pecan nuts, roasted razor clams with parsley butter, then back of cod roasted with herbs or Charolais beef chuck braised for seven hours, creamy polenta and butternut mousseline with orange. Amazing, as long as it lasts!
