As the boss himself says, bread is flour, water, salt and know-how! Max Poilâne (Lionel's oldest brother) is a figure with his wooden butterfly knot, velvet pants and vests. Mylène has taken over from his father since 1983 to ensure the good reception of the clientele and to ensure the quality of production, while also developing the activity by resellers. Sophie, his sister, opened his shop in Montparnasse. Max Poilâne chose to work with crushed stone flour and a grey salt on the Atlantic coast.
