Hervé Gaillard's farm is typical of the Médoc, set among pine trees. Hervé welcomes you to the farm, but you won't see any cows, goats or pigs, because Hervé is a heliciculturist, a breeder of large and small grey snails, which he transforms into ready-made meals and preserves. He'll be delighted to tell you all about his snail breeding, his methods and his animals... And when spring comes, Hervé produces strawberries and asparagus, so you can buy fresh and preserved strawberries, jams and white asparagus direct from the farm.
