DOMAINE THILL
Bérengère and Eric's adventure began in 2007. Their vines are growing in Gevingey. Organic since 2012, the domaine cultivates chardonnay, savagnin, pinot noir and poulsard. All cuvées are single-vineyard, with vines over 35 years old. The duo prefer fruity, fresh wines. The winemaking process is Éric's signature. He locks in fermentation at low temperature, to maintain the right balance of sugar, acidity and alcohol. Crémant regularly matures for over 20 months on laths. The liqueur wine is made only with "fine", not marc.
