Philippe Butin, who has run the estate since 1980, has just handed over the pruning shears to his son Kevin and Aloïs, both of whom are equally passionate about their work. The white Savagnin is matured in 228-litre barrels, and the yellow wines impress even the most demanding tasters. LES COTEAUX DE SEILLE
Read moreThis cooperative, created in 1836, is located on the banks of the Seille, in the heart of the vineyards between Lons and Château-Chalon. It groups together 23 farms from 15 surrounding communes and processes 8 million litres of milk per year into raw milk cheeses. Comtés take pride of place with a range of cheeses that can be matured for up to 24 months. Then come morbier, tomme and raclette. Like its neighbours, this dairy has also become a local shop. The reward: a gold medal in 2020 at the Concours Général Agricole for its old Comté.
