Céline and Sébastien Castan created their distillery by settling the still of their grandfather Castan. Already known for their white fruit spirits, they are now recognized for their craft whiskies launched in 2010. You will be able to get your numbered bottle chosen among five styles of Vilanova: the Berbie, matured in new barrels; the Gost, aged in American bourbon oak barrels; the Terrocita, peaty, aged in oak barrels; the Roja, aged in red wine barrels and the Segala, with rye malt.

A beautiful neighborhood boutique that's been around for over forty years! Sabrina, the owner, took over in 2007, adding her own personal touch. She has completely transformed the place into a beautiful space for conviviality. On offer are wines and whiskies from around the world, coffee and tea during the day, a wide selection of beers, taffy rentals and delicatessen products. Sabrina will be happy to advise you. At the top of a valley, in the tranquility and beauty of the hinterland of Gaillach, these owners work their 26 hectares of vines according to sustainable agriculture, with authenticity and character, in particular the Thibaud cuvée, made from pure Brocol, and a late harvest, the Maxime cuvée. But that's not all! They also offer two botanical trails (1.5 km or 2.5 km) to walk through the vines and discover grape variety panels and boards showing the plants in the vineyard (as well as audio comments from mp3 players - comments in English possible). Domaine Vaysette is also a cheerful welcome, in a modern building that can accommodate receptions and seminars.

Located in a former abbey, the Maison des Vins is a showcase for Gaillac wine, classified as an AOP and IGP appellation, with around a hundred wines to taste. During your visit, you'll learn about the nuances between dry and perlage wines, primeur and late harvest wines, and ancestral and traditional methods. Initiation tastings are also available, as are themed sessions on wine and chocolate or cheese, by reservation.

Francis, assisted by his daughter Charlotte, is a connoisseur in wine and as a result: from 2011 St. Michel's Square to Cordes-sur-Ciel, in its small cellar-restaurant shop, open all year round, it is a pleasure to report stories of the Gaillac vineyards while offering you a generous tasting to turn your taste buds. A rare selection and very beautiful bottles of South-West wine, Burgundy and of course the gaillacois country accessible for all the scholarships. There are also some artisanal spirits, and an interesting variety of whiskies.

A talented young mixologist, Alexis Taoufiq was named Meilleur Ouvrier de France Barman in 2015. After years of traveling the world and working in renowned establishments, he decided to set up his own high-end cocktail boutique in the French city of Episcopale. Here or online, you can discover his delicious creations in ready-to-sip bottles, presented in the form of collections: signature, historic or classic. For private or professional events, you can call on his services and even request tailor-made cocktails.

The 19 members produce, good year after year, around 2 000 hectolitres of red wine, 300 hectolitres of rosé and 50 hectolitres of white. Guided by Alain Montrozier, the cellar constantly improves its wines and even enriches its range. It had until then a rosé where gamay dominates, a white, Peysir, marriage of chenin and mauzac, a red, Lords de Peyreviel, marriage of gamay, cabernet, syrah and iron servadou, typical grape varieties. She has just been enriched by Maître Master of Sampettes, a generous wine from a selection of old parcels, high in oak barrels. The wine cellar offers wine tastings and a country wine and aperitifs. In association with other producers, she invites the discovery of a «vineyard path» and a cellar visits.

A brewer in the Tarn ? Yes, you read that right! This micro-brewery was born from the passion of Stéphane, who is hopped from head to toe. He will tell you the techniques of beer making in the middle of his machines, which are also very artisanal, and will teach you how to taste a beer, as one does with wine. Libertine (blonde), Clandestine (blonde), Délinquante (brown), Tout ô black (brown), Bulles de Vignes and Vent d'Ange (2 gueuze type beers), these beers have the "Nature et Progrès" label. I love this brewer!

The Rabastens winery was founded in 1953, at the crossroads of Toulouse and Albi. Specializing in the creation of wines with accessible, gourmet profiles, such as Tarani, it is driven by the values of Vinovalie, the union of winegrowers from the Pays d'Ovalie, founded in 2006. Today, the winery brings together over 4,000 hectares of vines and 315 winemakers who produce quality nectars every year. The wines are available at the cellar and on delivery.

In Cahuzac-sur-Vère, one of Cave Gayrel's three estates, Château Vigné-Lourac is a benchmark. Its vins de pays will appeal to all those who love fresh, characterful flavors: the red, made from local blends (syrah, duras, braucol), the dry or sweet white, or the rosé, which gives a mouthful of fruit. On avenue Foch, Alain Gayrel opened La Cave in 1997, where you can taste not only his own wines, but also a selection of the finest vintages from Gaillac and beyond. Arnaud, a farmer-brewer, offers you his organic craft beers made on his farm in Garrigues, from organically grown cereals and hops. There's Cascade blonde, Pic de Nore brown, a brown with cocoa and coffee aromas, Nuit noire, Pépite IPA, Grésigne white and other ephemerals. A new activity, since 2019, for this family of farmers who have been producing wheat, barley, soya, lentils and chickpeas for three generations, and who also cultivate 5 ha of vines.

Domaine Plageoles is 7 generations of winegrowers, 27 hectares and 2 farms: the Domaine des Très Cantous (Cahuzac-sur-Vère) and the Domaine de Roucou-Cantemerle (Castelnau-de-Montmiral). They produce white and red AOC wines, with a majority of white vines. In addition to cultivating mauzac in all its forms, Bernard Plageoles has brought back to life old grape varieties such as ondenc or prunelart. His natural vinification gives birth to beautiful sparkling wines (method gaillacoise), sweet and mellow, very characteristic.

Committed to the respect and love of his land, Damien Bonnet takes particular care of his vines. In the heart of the Tarn in the Gaillac area, this passionate winegrower shows an active pragmatism in the vinification and maturation. He allows his vineyard to produce wines with strong personality, and to occupy a place of choice in the evolution of the appellation of organic wines of Gaillac. La Clef des Vins is a wine shop offering a wide selection of wines, spirits and olive products. Here, you can taste some 16 different wines by the glass, thanks to the Enomatic system (a smart card credited with the amount of your choice), and discover the selection of the moment. You'll be able to try out classics and new releases at all price levels, and if you've always wanted to learn more about wine, courses and tasting evenings are organized on a regular basis. Founded in 1953, Cave de Técou, with its 465 ha of vineyards, is located between Toulouse and Albi, in the heart of the Gaillac vineyards on the left bank of the Tarn. Part of Vinovalie, it is a pioneer in barrel ageing, and now boasts 650 barrels of 225-liter capacity. The renaissance of the Domaine d'En Segur is due to the famous pharmacist Pierre Fabre. He acquired the land in 1989 and decided to replant the vineyard. Since 2017, oenologist Lionel Barre has been in charge of the estate. The vines are planted overhanging the Agout river, on terraces of gravel covered with silt and pebbles. The fruit of this crossroads of Mediterranean and oceanic influences, the domaine produces powerful red, rosé, dry white and sweet wines. The domaine has its own cellar and online store.

The Canto Perlic estate is perched on the gentle hills along the northern edge of the Tarn valley, just 6 km from Gaillac. Braucol, mauzac, loin de l'oeil and duras flourish here on 8 hectares of vines in organic conversion, in an eco-responsible approach for an estate turned towards sustainability. Poets will be delighted to learn that the estate's name means " partridge song " in Occitan, a partridge you'll recognize on the labels of several of the cuvées offered by this family-run estate.

Facing south and benefiting from a microclimate typical of the "little Tuscany" of the Tarn, the Barreau family's vineyard produces remarkable white, rosé and red wines. Their bottles are easily recognizable by the vine leaf on the label. If you need any other information to convince you to go and discover this Gaillac estate, you should know that the production of Domaine Barreau is marked Vigneron Indépendant, emblem of a family of responsible professionals who respect tradition.

This 20-hectare vineyard and olive grove has been producing nectars for about 15 years. It all began with the arrival of Christophe Merle, from Charente, in Gaillac. This region, particularly renowned for its vineyards, seemed perfectly suited for this professional to express his passion. In 2006, with his wife Christelle, they gave birth to this choice estate whose first vintage was released the following year. Since then, Château Balsamine has become a regular on the tables of gourmets and restaurateurs.
