Saffron has been grown in Quercy since the Middle Ages. Between the ^15th and ^18th centuries, it was everywhere, before being somewhat forgotten and rediscovered a few centuries later. Growing it requires patience and attention to detail. To find out more, Saveurs et Safran has a small museum dedicated to this spice, also known as red gold.
