Read moreDominique Sellier represents the third generation of Escudier artisanal cheese ripeners. He is a master cheesemaker of the Guilde des fromagers de Saint-Uguzon. In his beautiful contemporary shop, he offers seasonal cheeses, perfectly matured in the basement cellar, and specialities from our regions and elsewhere. His Brie de Meaux with figs and walnuts and his Camembert with morels are marvels, as is the Boulonnaise, a creamy cow's milk cheese with macerated grapes. It is very difficult to choose from so many delights (more than 200 cheeses), but the boss and his team are there to give their judicious advice both on the choice of cheeses and on the wines that accompany them, and you will sometimes be surprised!
