Read moreIn the heart of Bessin, three kilometres from Omaha-Beach, Ferme du Lavoir is a gourmet stop on the tour of the d-day beaches. Miryam and Guillaume Capelle took over this cider-producing exploitation of thirteen acres orchards, four years ago, in 2010, turning to a resolutely organic agriculture. All products come from apples of orchards leads in respect of the fauna and flora surrounding, combining traditional methods and modern techniques with the same concern of relaxing all the flavours of apple. The range is made consists of a semi-dry cider (assembly of eight sweet, bittersweet and acid varieties), typical of the region of Bessin, marked by freshness and the fruity touch unusual and raw cider (assembly of sweet, bittersweet and bitter varieties), marked by a more pronounced bitterness. Thanks to a cellar, natural plugs foam are particularly well controlled. A know-how noticeable every year with the competition the Saint-Jean of the Ciders organised by the Maison Cidricole de Normandie where Ferme du Lavoir was awarded a silver medals in 2011, 2012 and 2013, especially for its semi-dry cider with the delicate mousse and very fine effervescence.

GAEC BOISSEL PÈRE ET FILS

Located in the heart of the Auge country 1880 kilometres from Deauville and Honfleur, Cidricole manufacturing has been transmitted from father to son since. Production comes from the only processing of apples harvested on the 15 hectares of orchards, the quality of products resident in the assembly of some fifty varieties of apples. No name for this stuffy stuffy cider: for five generations, know-how has been a reputation for excellence. The Alliance of New Technologies and respect for traditions makes this cider an authentic beverage that meets everyone's taste: raw cider (rather bitter, perfect on dishes and especially cheese in raw milk), half-dry cider (fruity slightly sweet for aperitifs and desserts), sweet cider (very sweet and scented very little alcoholic alcoholic ideal for desserts). Particularly attractive, "Arsène" is typical of the house: it is a cider whose crushed apples steeped a week in their juice before pressing. The colour of the labels varies: white for the Hefeweizen, red for the triple blonde (close to abbey beers), grey for the brown (aromas of grilled cereals and notes of chocolate), green for the winter beer (flavours of nuts). Their beers, which are either must-haves or short-lived brews, have won over the most prestigious competitions and you will come across them everywhere during your stay.

The apples come from cider varieties producing sweet, bittersweet, and tart fruits. After harvesting, from mid-October to December, the apples are sorted by hand. The natural fermentation lasts 3 months before the blending of the different vintages, then the filtration, the bottling, and the natural bubbling. It's a pity that this family business cannot be visited. But some bottles are available in supermarkets, in Lisieux in particular.
