David works on the family estate to offer a fine range of wines. For tasting, he offers Volcanik, a 100% Gamay red, with notes of Morello cherry and a subtle peppery finish, made from century-old vines grown on basalt soil. He also produces red, white and rosé cuvées called Les Fesses, a funny name that simply comes from the locality of the same name where the grapes grow. A modern cellar at the end of the village, a young couple, welcoming and very well aware of marketing, an inimitable local: the Sauvat estate is part of unavoidable department! The estate takes its name from a magnificent tree planted in the heart of the vineyard. Descended from a family of peasants dating back to the French Revolution, this atypical winemaker evolves off the beaten track. On a volcanic soil of basalt, he produces powerful, unique wines. Yvan Bernard, a former student of the Beaune oenology school, produces certified organic wines with Audrey Baldassin, under the appellation Les Chemins de l'Arkose, which pays tribute to the local stone. Yvan Bernard has quickly established himself as one of the rising stars of the Auvergne wine scene. Yvan and Audrey's biodynamic wines are respectful of the environment and nature. The estate covers almost 12 hectares, in the communes of Montpeyroux, La Sauvetat, Authezat, Corent and Boudes. Tours of the winery are available by appointment.

Jean-Baptiste Deroche and Laure Cartier, young winegrowers, have taken over the estate from Odette and Gilles Miolanne, whose name they have kept. The property has a volcanic soil where organic farming is practiced. Discover the red Volcane, the rosé Volcane, the Pinot noir, the red Ephémère with carbonic maceration and the white Ephémère, made with gewurztraminer, rare in the region. The first AB certified vintage dates from 2016. In the summer, at the ephemeral bar, you can taste the wine of your choice by the glass and enjoy wine tours.

An organic vineyard since 2009, Domaine des Trouillères is a forerunner in the region. The 6 ha of vineyards produce wines of character that testify to the excellent work of Jean-Pierre Pradier, the former owner, and his successors, Camille and Mikael Hyvert, who arrived in 2016. Convinced that a wine should be as natural as possible, this couple, keen on archaeology, even experiments with vinification in earthenware jars. It is possible to visit the farm located in the middle of the vineyards, even in groups of up to 35 people.

One of the younger generation of Auvergne winegrowers, the dynamic Benoît Montel vinifies nearly 400 hectolitres of red, rosé and white wine in Riom. He practises integrated farming, limiting the use of chemicals. His frank, aromatic wines (Côtes-d'Auvergne, Chanturgue red, Madargue red, Châteaugay red, IGP du Puy-de-Dôme...) are benchmarks in the northern sector of the appellation. With the exception of one of his white cuvées, he does not blend his different grape varieties. Benoît Montel is like his wines: sincere, frank and enthusiastic!

Since 2020, Thibaut, representing the 4th generation of the Tourlonias family, has been offering a selection of red, white and rosé wines, as well as pure grape juice. The red wine cuvée "1690" is described as having black fruit aromas, floral notes and a fruity mouthfeel. It is recommended for pairing with charcuterie, grilled meats and light cheeses. Their red wine "Les Plats" comes from a single parcel and features black fruit, peppery notes and a tangy edge. It goes well with dishes in sauce and stronger cheeses. Their white wine cuvée "Dames Blanches" is described as round, with floral and tangy notes. It goes perfectly with seafood, white meats and cheeses. Finally, their rosé wine cuvée "Perles Du Matin" is fresh and round, with tangy, citrus notes. Recommended for aperitifs, salads and barbecues. Domaine Tourlonias also offers a delivery service.
