Created in 2003, this magnificent wine estate in the heart of green Provence is, since 2011, the property of Gilles Pedini, a native of Nice and above all an epicurean in love with the region. With the help of his talented cellar master, he has been able to restore the estate's reputation for excellence: uprooting and replanting of the vines, always in constant evolution, increased rigour in the work in the vineyard and in the vinification process, limiting the environmental footprint. It should be noted that the estate has obtained level 3 High Environmental Value (HVE) certification.

Culminating at an altitude of 380 meters, this territory of 600 hectares, including nearly 9 hectares of olive trees and 31 hectares of vines, benefits from 3 natural water springs feeding the domain which extends over the two appellations, coteaux-varois-en-provence and côtes-de-provence. The wines are available in three colors, white, rosé and red and are made from traditional Provencal grape varieties, syrah, grenache, cinsault and rolle. The estate also produces and sells its extra virgin olive oil, extracted after cold pressing.

In an exceptional setting, Château Saint-Julien d'Aille extends over 172 hectares, between vineyards, pine forests and olive groves, set against the foothills of the Massif des Maures and bathed by the River Aille. The precious sandy-clay terroir with quartz on the slopes, where the sunshine favors good ripening, produces excellent grape quality. The combination of organic farming and cutting-edge technology contributes to the production of some of the finest, most elegant and aromatic AOC Côtes de Provence wines, which regularly win medals at the most prestigious competitions. The vinothèque awaits you to discover the château and taste its wines: Cuvée Triumvir in red and white, Cuvée Imperator and Cuvée Saint-Julien in red, rosé and white.

It is first of all the beauty of the place that will strike you. The immensity of the domain which covers 680 hectares where the Templars built a commandery in the Middle Ages. Owned by the Paquette family since 1952, this AOP Côtes-de-Provence-Fréjus vineyard is today managed by Jérôme, a graduate oenologist from the Bordeaux Institute, assisted by his daughter Claire, also an oenologist, in the respect of the authenticity of the terroir. The grape variety is composed of grenache, mourvèdre, syrah, tibouren and rolle. It gives expressive wines, like the Osmose rosé born in 2011, a harmony of tibouren and grenache vinified in oak barrels. We also recommend its little brother, the white Osmose, born the following year.

The Barbero family vineyard, located at the foot of the Esterel Mountains on 36 hectares, including 10 hectares of vines, produces excellent wines in the Côtes-de-Provence appellation and IGP vins de pays des Maures. The terroir allows us to obtain a range of rosé and white wines with floral and fruity aromas, whose brightness and freshness are characteristic. As for the reds, the silkiness and balance are combined with aromatic complexity to give birth to quality vintages. The estate also operates a charming hotel and a recently renovated restaurant.

Owned by Roger Zannier since 2011, the estate has about 100 hectares of vineyards. A true wine enthusiast, he has turned this Provencal terroir into a renowned vineyard with gastronomic vintages that produces 90% rosé, 5% white and 5% red. His latest vintage is distinguished by a very high level of quality, like the Clos de Capelune rosé and Excellence rosé 2021, gold medal at the Provence wine competition, as well as at the Terre de vins competition.

The estate covers 80 hectares, including 20 hectares of vines, at the foot of the Pilon Saint-Clément massif. Half of the vineyard is planted with old grape varieties - between 20 and 50 years old - such as grenache, cinsault, and ugni blanc, and the other half with recent grape varieties, such as syrah, semillon, and rolle. The AOP coteaux-varois-en-provence wines are made in a high-tech press, then in thermo-regulated vats, before being aged and preserved for the reds in the tuns room. For several years, the vineyard has been using organic farming methods.

In an exceptional natural setting, the Château de Chausse, owned by Charles S. Provençal winemakers have understood the importance of experimentation and research for their production. In Vidauban, the Centre du rosé is multiplying its efforts to promote the consumption of rosé wine in France and around the world: conferences (rosé evenings, international rosé meetings), newsletters, intra and inter-company training, scientific publications, organization of tastings, technical articles and interviews in various media... and of course the website!

Sir David Murray, a Scottish, became owner of this area of 260 hectares, of which 40 were vineyards, in 2005, the year that marked the beginning of a new era for Château Routas. Located about 400 metres above sea level, it is one of the highest vineyards of the appellation coteaux-en-provence.

Bought by the Ghigo family in 2010 (already owner of Château Peigros in Pierrefeu du Var), this 17th century property is on 34 hectares and is composed of two terroirs of predilection for vine growing. One on the coastal fringe, some plots of which are classified as AOP Côtes de Provence La Londe, and the other close to the Maravenne river, composed of alluvium and sand, and from which a PGI wine of the Moors named La Sabine is produced. Today, the entire estate is run in organic farming.

If the hermits occupying the abbey of the Terres de Saint Hilaire in the 17th century already practiced viticulture for their own consumption, the work of the vine seems never to have ceased since. This ancestral culture took off again in 2002, when the Burel family acquired the estate. Attached to the notions of authenticity and sharing (Terra Vitis label), the estate's team develops products that appeal to novices as well as initiates.

Bought in September 2010, the second AOP Côtes de Provence vineyard of the De Wulf family, which also owns the Jas d'Esclans estate in La Motte, is cultivated organically. It covers 43 hectares located on the edge of the Argens valley, at the foot of the Estérel, including 23 hectares of vines that produce 60% rosé, 30% red and 10% white. The grape varieties worked are grenache, cinsault, syrah, mourvèdre, carignan, cabernet, vermentino or rolle, ugni blanc and clairette.

The Château des Ferrages is one of the four fortified places that have marked the history of Pourcieux. Typical of Renaissance buildings, flanked by a large park with trees, it dominated the village. But today its most precious treasure remains undoubtedly the wine estate that bears its name. From these 28 hectares come four vintages, carefully matured in the cellar of the Château des Ferrages. This cellar, with a surface area of more than 1000^m2, combines modern winemaking techniques with traditional ageing.

Château Camparnaud is a vineyard located in Carcès, Provence. The vineyard also offers private tastings on request.

Created in the 1970s, this estate is above all a family story, that of brothers Pierre and Robert Chauvier, supported by their father. This 15-hectare vineyard, with the Roquebrune rock as a backdrop, has been entirely restructured, with the addition of grape varieties such as tibouren and mourvèdre, alongside grenache and syrah. Today, a new generation, just as passionate, has taken over to prolong the quality and pleasure of these renowned wines, rosé and red, of the Côtes de Provence appellation.

Former summer residence of the archbishopric of Aix-en-Provence, the 110-hectare estate, including 40 hectares of south-facing vines at an altitude of 400 meters and cultivated in sustainable agriculture (HVE), is located at the northern limit of the Coteaux-d'Aix-en-Provence appellation. The clay-limestone soils are planted with Syrah, Cabernet, Grenache and Cinsault grapes for the red and rosé wines, and Sauvignon, Grenache Blanc and Rolle for the white wine. Many new gold, silver and bronze medals were obtained in 2022 for the 2021 vintage.

Since the domain was taken over in 2001 by a Swedish owner and a new team, important material investments have been made at Domaine Grande Bastide. The long work to develop the quality of the wines has also led to the awarding of regular medals at the Concours des Féminalises and the Concours des Vignerons Indépendants in particular. The château has nearly 8 hectares of vines in the Côtes de Provence appellation d'origine contrôlée, which are spread out over the first foothills of the Maures massif. The entire estate has been organically farmed since 2020. The grape variety is composed of syrah, grenache, cabernet-sauvignon, cinsault and rolle. The wines are available in the 3 colors white, rosé, red, through two ranges, the "Grande Réserve Domini", whose red 2019 won a gold medal at the competition of wines of Provence 2021, and the "Cuvée Epicure".

The Domaine la Grand' Vigne has been passed down from father to son for five generations. Today, Roland Mistre, who is also an oenologist, is the conductor of the orchestra. In 2003, he relaunched the vinification at the domain after several decades spent in the cooperative. With the help of his sons, he manages 15 hectares of AOP coteaux-varois-en-provence. His cuvée La Grand' Vigne is available in three colors, while the cuvée Les Fournerys, made from a selection of plots and vinified in barrels, reveals even more gastronomic aromas.

La Badiane is a winery located in Toulon, more precisely in Saint-Jean-du-Var, at 22 rue Berthier.

This winery, founded in 1912, operates a 700-hectare vineyard in the Côtes de Provence appellation, partly under organic farming methods. Its terroir benefits from a Mediterranean climate favourable to grape varieties such as syrah, grenache, cinsault, mourvèdre, cabernet, rolle and carignan, which allows for an excellent production of AOP and IGP wines from the Maures region, regularly awarded in competitions. At the cellar, you can also find wine-based products.

This cooperative will delight lovers of good wines, qualitative grape varieties and diversity. Not really a novice because it has existed for a good century, this cooperative has known how to renew itself and live in its time. You will find here AOP Coteaux Varois de Provence, IGP Var and some organic wines. La Sainte-Baume offers a range of rosés perfect for summer and other more complex wines. You can taste and buy the famous Restanques range, in three colors.

At the foot of the Massif des Maures nature reserve, Anne and Dimitri produce, as a couple, with passion and humility, wines with the scent of Provence. The tasting of the beverages of the domain is done at the foot of the immense and majestic hundred-year-old plane tree. The wines stamped Jale are the result of a reasoned culture adapted to the complexity of the soils, in harmony with nature, in a scheme that wants to be "organic decompartmentalized". AOP Côtes de Provence, the whites and rosés are fine, elegant and aromatic. The reds are for ageing, without heaviness.

Château La Mascaronne, located in Le Luc en Provence, boasts a unique terraced vineyard. Spread over 60 hectares, surrounded by oak and olive trees, it has been farmed organically since 2016. This environmentally-friendly approach is reflected in every sip of their wines, made exclusively from the estate's own vines. In the Côtes-de-Provence appellation, these wines reflect the authenticity and passion of the terroir, and guarantee an enjoyable taste experience. In short, Château La Mascaronne illustrates the excellence of viticulture in an unspoilt natural setting.

Nathalie Coquelle and Henri De Wulf produce Coteaux Varois en Provence PDO wines in all three colours, as well as Var PGI wines in red and rosé. The 30 hectares of vineyards are run in organic farming, with the utmost respect for the environment. The vintages are named after expressions that have disappeared such as "Fesse-Mathieux", "Ribote", "La Jouvencelle" or "Suivez-moi-jeune-homme"... For the anecdote, the signing of the decree of the Coteaux Varois en Provence appellation in 1993 had in the beautiful cellar of the 12th century.

The name Difé comes from the owner's native land, which means "fire" in Creole. Originally from Guadeloupe, he is also behind the artisanal production of arranged rums that he sells on his website and at a few retailers throughout France. A tribute to his origins. Prepared with the maceration of plants, fruits, spices or even mixtures of fruit juices in the purest West Indian tradition, without colorants or preservatives, the rums are a real pleasure in the mouth. The maceration of the alcohols is carried out in Nice.

The vineyard is spread over several terroirs at the foot of the Sainte Victoire, on the southern slope next to Aix en Provence. Owner Jérôme Maillot has been practicing biodynamic viticulture since he set up in 2014, and has been certified Organic since 2017. He offers several wine cuvées, including a 100% Carignan noir red wine vinified without inputs and with a minimal dose of sulfites. He confides: "My orientation is to work the vines as close to nature as possible, with maximum connection to our environment".

A qualified photographer, Bruno Debon chose to make his dream come true by becoming an organic farmer about ten years ago, and now a winegrower. In front of his house located at the bottom of a limestone canyon near the Chateaudouble gorges, he began by planting 2,500 apple trees of six varieties, whose production he sells at nearby markets and to local AMAPs. He then rehabilitated his 2 ha of old vines with 5 grape varieties, to produce a very personal wine, organic of course and without inputs. A still confidential domain and wines that are a favourite.

With over 25 years' experience in gastronomy, Christophe Cavani has built up a solid reputation with big names such as Alain Ducasse. Surrounded by his children, Pauline and Valentin, he offers his specialities for takeaway. A delivery service is available at lunchtime. Cocktail platters and aperitif boxes are also available. But don't forget to make a reservation. All you have to do is heat up! And if you change your mind, the restaurant is right next door to the boutique.

The name "BACHO Brewery" comes from the Amerindian language. Loup" is in fact "Bacho", in reference to the Loup river, which flows through the commune where this craft brewery is located. BACHO beers are aimed at all palates, connoisseurs and amateurs alike, and are presented to you in this 160 m² space which includes the boutique, the brewing workshop and the bar for tastings. It's a great opportunity not only to discover production on site, but also to immerse yourself in the creation of a craft beer from A to Z. Nibbles are also available.

Domaine Saint-Jean was created in 2006 by Nathalie and Jean-Patrick Pacioselli, in the heart of the Bellet AOC, in the hills of western Nice. The couple runs a young farm certified in organic farming. The typical grape varieties of the Bellet appellation, such as rolle, folle noire and braquet, have recently been planted on the estate and produce rosé and red wines that regularly win awards at the Concours Général Agricole. A little anecdote: the wines of the estate have even been included in the Musée Masséna.

This 46-hectare vineyard, owned by passionate friends, has the particularity of producing atypical PGIs from grape varieties that are original in the region. Chardonnay, Viognier, Cabernet Sauvignon, Merlot and Syrah are grown in an agro-ecological manner, expressing all their character and typicality on this beautiful Provencal terroir. To convince you, taste their two flagship cuvées: the Saint Auguste red and the Viognier Sainte Fleur 100% viognier white.

The Pourraques estate, created around 1300, became in 2015 the property of the internationally renowned chef Joachim Splichal, associated with his sons Stéphane and Nicolas, and was renamed Domaine de Cala. Nestled in the heart of a forest, this one now covers more than 40 hectares of vineyards in the heart of Provence Verte, in AOP Coteaux varois en Provence, planted with four grape varieties for the red and three for the white, in a clay-limestone soil, which allows to produce wines of pleasure, whatever the color.
