The vineyard of Jean and Patricia Laponche, producers and harvesters, extends over 30 hectares of sandy-stony soil made up of rhyolite pebbles, on the edge of the Esterel, a terroir that enhances the taste and specificity of the wines. A forester and alchemist of the garrigue, Anouchka's passion for nature has been passed down from her ancestors, and it was in the midst of wild harvesting that her desire to differentiate herself from traditional liqueurs and arranged rums was born. Doctor "ès. Rhum", she produces elixirs where organoleptic balance is mastered. Saffron, wild fennel, rose geranium, cade berry, rosemary, thyme flower or myrtle, the aesthetics of the bottles are sublimated by the plant or fruit that expresses itself, infuses itself and offers such a unique and particular taste. Along with Château de Selle (Taradeau) and Château Romassan (Le Castellet), Clos Mireille is one of the three properties that make up Domaines Ott*. Acquired in 1936 by Marcel Ott, Clos Mireille benefits from an exceptional geographical location facing the Mediterranean Sea, which is conducive to the production of subtle and unique wines. The white wine, with its blend of Semillon and Rolle, rivals the best national wines, while the rosé remains an international reference.

A classified growth since 1955, this 63-hectare estate, 53 hectares of which are planted with A.O.P. Côtes-de-Provence vines, has been certified organically grown since 1990. Owned by the Matthieu De Wulf family since 2002, the Provencal grape varieties are grown with the greatest respect for the environment, and have been certified organic for over 20 years, and certified organic wines since 2012. Recognizable by the emblematic wolves that adorn their labels, the estate's wines reach a loyal and international clientele.

Patricia Ortelli completely rebuilt the vineyard in 1991, located on land with balanced limestone textures, and stretching out on sunny terraces. The estate owes its name to the three brothers who settled here in the early ^18th century: Paul, Laurent and Pierre-Alexandre Baraton. Facing the Levant Islands, Port Cros, and Porquerolles, this th century castle has always been a breeding ground for vine and olive cultivation. At the time, its occupants, the Chartreux of the Verne, already cultivated them. And the merchant boats coming from the salt pumps in Hyères used their passage to load olive barrels and olive pots from their ships. The Rose family, which has been in the field for 17 years, has been returning to history and perpetuated the work of the nuns by replanting more than 50 hectares of vines and 10 hectares of olive trees (3 000 trees). The oil produced from the varieties cayon, bouteillan, aglandau, picholine and grossanne, is classified AOC Provence. In 2015 she won the gold medal at the PACA Regional Oil Competition.

The know-how of the Vial family has been passed on for five generations. Here, the organic culture is king, which allows to emphasize the natural qualities of a soil of character, where the grapes are vinified with the greatest care. On a 300-hectare estate, the 78-hectare vineyard in AOP Coteaux Varois in Provence produces excellent red wines, the Tradition, Carignan and Batilde Philomène vintages, but also white and rosé wines, as well as an I.G.P. A family property since 1974, Château du Carrubier extends over 88 hectares, including 25 hectares of vines, planted in the Maures hills and close to the sea. Here, tradition rubs shoulders with modernity, and the know-how of yesteryear lives on. The harvest is still done by hand, and the grapes are sorted and de-stemmed before being put into vats. The wines produced in the three colours are fully classified as AOP Côtes de Provence, and are regularly awarded medals and prizes.

The estate is located in a paradisiacal place between Jouques and Rians, at four hundred meters of altitude. Nestling at the foot of the Vautubière river, the vineyard faces the Sainte-Victoire and extends over 10 hectares, on a clay-limestone soil, with a southern exposure. This estate, run by Pierre Michelland, produces wines with the most complex aromas, within the framework of organic farming. In this northern part of the Coteaux-d'Aix-en-Provence appellation, the harvest is late, and carried out by hand for each grape variety.

Created in 1913, Les caves du Commandeur are more than a century old! This farm, freshly certified High Environmental Value,is located in the middle of green Provence. Spread over the AOP Côtes-de-Provence and IGP Var appellations, the vineyard is worked with a deep respect for the environment. With the Syrah, Cabernet Sauvignon and Grenache grape varieties for the reds, Syrah, Grenache and Cinsault for the rosés, and Rolle for the whites, the nectars obtained are fine and elegant.

This estate offers an innovative concept with a magnificent vineyard, spread over 46 hectares entirely in the Côtes de Provence appellation and certified organic since February 2021, associated with a boutique hotel with a contemporary design. Well known in the world of wine growing, this 5 ha estate produces mostly the famous AOC Vins de Bellet, one of the smallest vineyards in France. Bellet is a rare wine from the south of France, which you can discover at the domaine de la source, in the form of visits and tastings for the connoisseurs. In addition to that, the Dalmasso family also owns some olive trees on the hillside. They produce a typical and tasty Nice PDO oil, with a ripe fruitiness and packaged in small bottles (20 cl and 50 cl).

Roland Sicardi, a retired restaurant owner, and his son-in-law Joseph Sergi have taken over the vineyard to rejuvenate and expand it, always seeking quality through the expression of the grape varieties and their terroir, all the while fiercely defending the specificity of the Bellet cru. The white wine (made from the rolle grape variety) is vinified in oak barrels and is only released for sale after 18 months. As for the red, it waits two years. Through the rosé, one can recognize the Braquet grape variety which gives it a specific salmon colour.

Aurélie Teillaud's property covers 300 hectares, of which 72 hectares are under vine. Having belonged to the Grimaldi family, ancestors of the princes of Monaco, it was bought in 2005 by her father Bernard Teillaud. The technical and oenological contributions of Château Sainte-Roseline (another property of^Mrs. Teillaud) quickly bore fruit. Two very tasty vintages are available in the three colors. Each year, the vintages win their share of awards. The charming guest house won the silver medal in 2019 at the Trophées de l'Oenotourisme.

In the authentic setting of a museum with carefully displayed bottle collections, wine has been taking its time to age properly since 1860. Between Mount Aurélien and Sainte-Victoire, the Château de Pourcieux, an 18th century architectural ensemble, has belonged to the Marquis d'Espagnet family since its origin. Since 1986, Michel d'Espagnet has maintained the winegrowing vocation of the château, joined first by his son Rémi in the winemaking department, and then more recently by his daughter Alix in the marketing department. With approximately 30 hectares, the estate, certified High Environmental Value (HVE), cultivates a link between tradition and modernity of its wines thanks in particular to the creation of a new cellar in 2017.

The Gualtieri family's vineyards, with a great diversity of grape varieties, extend over 80 hectares of south-facing slopes in the heart of the Maures massif. The Domaine de la Croix is part of the very closed club of classified growths of Provence. This 8-hectare vineyard, located in the Salins plain, has the great fortune to live a second life thanks to Laurence Berlemont, an agricultural engineer, and Patrick Devaux, who both, with persistence and imagination, have been able to revive the vineyard, which has been organically farmed since the 2013 harvest and biodynamically farmed since 2021.
