His talent and the quality of his products have been acclaimed by critics and gourmets alike, and he has received an award from the International Culinary Order. Every week, 60 to 70 fishes leave his laboratory, whole or sliced, to be distributed mainly in fish shops and delicatessens, in Aquitaine and in Paris.
