The Maison Fossier opened its doors in 1756 as a small artisanal biscuit factory. In 1775, its biscuits were present at the Coronation of Louis XVI in Reims, and the biscuit factory became the King's supplier. In 1845, a certain Monsieur Fossier, a baker by trade, took over the biscuit factory "Maison Mère des biscuits de Reims" and its delicacies. Today it is the only representative of the biscuit-making tradition of Reims. Also to be discovered: the Champagne shortbread, macaroons and the Charles VI, a double shortbread made with pure chocolate butter.

Maison Fossier, a veritable institution in Reims, also has a store near Épernay. This 200 m² store offers a wide choice of cookies and compositions. A great place to discover all the shapes, flavours and colors of Fossier cookies. The famous pink cookies from Reims, croquignoles, meringues, madeleines, shortbread and a whole host of other delights! We're particularly fond of one of our latest creations: sablé champenois with almonds and champagne, a real treat!

Reims is not only the city of Champagne, it is also the city of biscuits. Moussa Ouarouss is renewing his ties with this little-known facet of the city. In his range of biscuits, only the good stuff: local flour and sugar, eggs from hens raised in the open air, no colouring or preservatives. We love his exotic madeleines with lemon yuzu and their local version with Reims biscuit. Between macaroon, cake and meringue with biscuit of Reims, pavé and puck with pink biscuit powder to be tasted with a glass of champagne, the biscuit factory makes us see life in pink!
