The Maison Fossier opened its doors in 1756 as a small artisanal biscuit factory. In 1775, its biscuits were present at the Coronation of Louis XVI in Reims, and the biscuit factory became the King's supplier. In 1845, a certain Monsieur Fossier, a baker by trade, took over the biscuit factory "Maison Mère des biscuits de Reims" and its delicacies. Today it is the only representative of the biscuit-making tradition of Reims. Also to be discovered: the Champagne shortbread, macaroons and the Charles VI, a double shortbread made with pure chocolate butter.

He is young, he is not thirty years old, but he has a beautiful professional experience. A few years ago, Sébastien Gentil left his home region and sailed for Guadeloupe, where he worked for two and a half years in a rhumerie. Returning to the country, this inventive young man seeks to create a new, new product. He settled in 2007 in Saint-Rémy-le-Petit and on a piece of land made available by his father, he cultivates green, peppermint and Moroccan mint and that without pesticide. He carries out weeding by hand and for the harvest, he uses trait chevaux. After several trials that alone could tell you in detail, this long work gave birth to three babies: " Menth'Ardennnes "," Menth'Champenoises "and" Frezz'Ardennes ".

From a much finer flesh than the so-called "Burgundy species", the snails raised by Thierry Letissier come from a species originating in Algeria. These are shell snails, of the same size as "Burgundy", prepared and packed in jars. Mr Letissier produces about 500 000 "Big Grey" for the vast majority of marketing, by sales to individuals directly at the place of production, but also to local conservators. They are dedicated to reproduction. They are high in park and in a heated greenhouses as soon as the cold point is on the horizon.
