Champagne Vincent d'Astrée is easily found with an entrance framed by two colossal statues: they represent the famous Dom Pérignon and the monk Jean Oudart (his oenologist). The house was created in 1956 and now has more than 240 families on 85 hectares of classified^1er Cru vineyards. In the great Champagne tradition, it produces a fruity champagne composed of 50% pinot meunier, 25% pinot noir and 25% chardonnay in a range of 8 cuvées.

Founded in 1879, the company initially supplied its grapes to leading champagne brands, before starting to produce its own wines in 1979. Each year, 100 tons of grapes are crushed in the traditional press, which can be admired on a tour, before moving on to the cuverie and the cellars. Maire de Bouzy for 25 years, Georges Vesselle was also director of the vineyards, Perrier-Jouet Mumm and Heidsieck Monopole. Two of her children, Eric and Bruno, also about the vineyard, joined him in 1993. It is them that took over the family business with the death of their father in 2009. In the mountains of Reims, their vineyard extends over nearly 17 acres with grapes to Pinot Noir (90%) and chardonnay (10%). Built in 1878 on the butte Sainte-Nicaise, this English neo-Gothic château is a landmark of the Rémois landscape. It is around one of the oldest wine-producing villages in Champagne, in Rilly-la-Montagne, that Couvreur Philippart grows its 7.5 hectares of vines, mainly pinot noir. It is this variety, blended with miller and chardonnay, which is used to make the Grande Réserve Brut. The mouth is ample, vinous and evokes notes of cooked fruits. The Jacques Defrance estate, located in the heart of the Côte des Bar, has been producing an exceptional range of wines since 1867, including the famous Les Riceys rosé. In this house on the outskirts of the village, the 22-hectare vineyard has been cultivated for over two centuries, respecting tradition. The range is truly beautiful and full of nuances. It takes its name from the association of the first letters of the names of the three villages it represents: Baroville, Fontaine and Arconville. The vineyard extends over 13 hectares on a magnificent south-east-facing slope planted with Chardonnay and Pinot Noir. The winery practices integrated viticulture, preserving the natural balance of its soils. No chemical fertilizers, insecticides or anti-rot agents are used. It produces only traditional vintage champagnes, and ages its wines in oak barrels, respecting their natural acidity (malolactic fermentation is not systematic). If you like wines of great purity, then this is the house for you.

You'll be greeted by a smiling, relaxed welcome before beginning your guided tour. The tour takes you from the winery to the beautiful vaulted cellars, decorated with old tools, to gain a better understanding of the work from vine to wine.
