The Domaine des Bruniers has been producing Quincy for many years. Exposed on the banks of the Cher, the vineyard grows on terraces of sand and gravel resting on the limestone and clay of the banks. This noble terroir allows the Sauvignon grape variety to reach maturity very early. It is on these soils that it reaches the full bloom of its aromas and flavour, giving it its originality. The new managers - Ondine Caron and Samuel Dion - have renamed the old Boussard oil mill but they still produce walnut and hazelnut oil in the same artisanal way since 1860. Individuals can also bring their walnut and hazelnut kernels. You can watch the production live and leave with your own bottle. The Auron oil mill makes pure walnut oil, pure hazelnut oil... It is one of the last three oil mills in the Cher and therefore a curiosity in itself.

For 10 generations, the Bourgeois family has been winemakers from father to son to grandson, as if ad aeternam. In 1950, the estate, which consisted of only 2 hectares, was enlarged. Since then, over the years, Henri Bourgeois, his sons and grandsons, have built up a vineyard of 65 hectares, judiciously distributed over the hillsides of Sancerre and Pouilly-Fumé. The different types of soil such as flint, Kimmeridgian marl, limestone, clay-limestone, sandy-gravelly, sandy-silt, silt and tuffeau offer rare specificities in the mouth. White Sancerre, pouilly-fumé, sauvignon blanc, menetou-salon, red sancerre, rosé sancerre, are pronounced ranges that give rise to beautiful restaurant combinations. We will stop at present on the pouilly-fumé, elected of our heart by its very distinct aroma but also being rare as for the beautiful quality which one owes towards, thus "La Demoiselle de Bourgeois" combines elegance and presence making of this wine whose vintage is bottled only after one year, a model of pure and delicate expression of the white Sauvignon. The Sauvignon Blanc called "Sancerre d'Antan" is not to be overlooked, especially as it is unfiltered and its fruity and mineral nuances are drawn from the exceptional flinty soil of the village of Saint-Satur. There is a tasting room open almost every day of the year, cellar visits on request... Also a restaurant nearby, run by a family member.

Jean-Jacques and Monique Teiller work on the estate with their daughter and son-in-law Patricia and Olivier Luneau, the third generation. Located on the best slopes of the communes of Menetou-Salon, Parassy, Aubinges and Vignoux, their vineyard is worked in its entirety in Organic Agriculture (certified since 2017) and in Biodynamics (first year of conversion at Biodyvin in 2019), and it now covers just under twenty hectares. The property produces white, red and rosé Menetou-Salon. The white is made from the Sauvignon grape variety. It is representative of the Menetou-Salon appellation and its taste is typical of Domaine Teiller. Its nose is intense and mineral with notes of citrus, peaches and ripe fruit. It is ideal with a crottin de Chavignol - for example, with fish, white meat or an aperitif. The red and rosé wines are made from a pinot noir grape variety that is rooted deeper in the clay-limestone soil. The red releases its aromas of red fruits, raspberries, cherries and spices in a bouquet of flavours. It is a perfect accompaniment to terrines, meats... and chocolate desserts! Its fame goes beyond the borders. Tadashi Agi and Shu Okimoto even refer to it in their famous manga Les Gouttes de Dieu. The Jean Teiller estate produces three white wines (classic, Mademoiselle T, Rencontre), a classic rosé and three red wines (classic, Hommage, Rencontre rouge). A beautiful Cher estate to discover!
