This is the educational estate of the Lycée Viticole de Davayé. Organically farmed, its vines produce Pouilly-Fuissé, Mâcon-Davayé and, above all, Saint-Véran, an appellation for which the estate has embarked on a terroir identification process, in conjunction with the famous Unesco-listed climats. Other home-grown delights include cheeses, produced by a herd of 180 Alpine goats, 60 kids and 12 billy goats.
