Here is the third and last estate producing the IGP Coteaux de l'Auxois. For several years, Aurélien Febvre has begun to revive the family estate with know-how and passion. The 10,000 bottles it produces each year are labelled "bio". Aurélien offers two Chardonnay vintages: The Thorey, quite mineral, and En Aparté, a vintage produced from the oldest vineyards of Auxois since they are nearly 70 years old! There is also a red wine, mixture of Pinot Noir and… gamaret, a grape from Switzerland. to taste! Another novelty of the year: the vinification is done in… clay brick amphoras. Here, innovation is not feared and it is a real success. As a bonus, we can have tasting courses, half days of discovery of the vineyard. There are so many reasons to pass through Thorey-sous-Charny!
